So earthern pot keeps water cool bcuz it's made of Mud But Not Only It Being Made Of Mud Can keep it cool you have to put it in a open Spot for air To pass Thru It so that the mud Particles can keep water cool 🆒

The earthen pot water is cool because the earthen pot has very small holes which we can't see with our naked eyes.From the small holes the drops come outside and get evaporated and from evaporation the waters gets cool.

Answer- the earthen pot(matka) is made up of sand so we know that if it is made up of sand then it will have pores on it in which the water which is present in the earthen pot will come out of the pot in drops which will helps in the evaporation (it is a cooling process)hence , it store the cool water in it.
To make it more cool u might have seen that some people cover the matka from jute (😂Bora) to store the drop water in the Bora which will make the evaporation more quickly
