Made the salad today..delicious!! Ate it over the lettuce instead of putting it in beforehand. Worked out very well. Looking forward to getting Kathy's cookbook!
Mermaid, I think you idea of eating it over the lettuce is actually a much better idea. Then you can just throw it over fresh lettuce anytime you want some and not worry about if the lettuce is still crispy. Great addition to this recipe! After a few days of failures in the kitchen, I made this taco salad to have for lunch today. THANK YOU, JOEY! Finally, success. I need to stick to the tried and true and basic recipes.
It was! I normally only stick to what I want to say in the intro and outro because they take up so much time, but when that thunder happened, I had to talk about it. I have been filming videos for 3 years and that was the first time I ever filmed one that wasn't on a sunny day here in Phoenix. The rain Is always so special. And seeing that flower happening on the cactus was amazing. Sad new, it rained for a few days and that flower got so heavy it fell off the cactus. So kind of heartbroken, but I know that is part of nature and it will sprout another flower. I just love watching all that beauty happen in front of me. Thanks so much for watching.
We made this today but we didn't add the lettuce and fresh tomatoes to the pasta. Instead we ate the pasta as a topping for our lettuce and tomatoes then added fresh chopped jalapeños and black olives. That way we could add more bulk with the less calorie dense foods. My spouse always feels hungry after a small bowl of pasta. I'm getting on the list for this cookbook.
I am having non WFPB non SS family over Monday night after an afternoon of paddle boarding. So I now know what I'm going to make on Sunday to serve Monday night. I am also going to a work picnic where I expect there won't be many compliant foods served, so I will plan to make lots of this to have leftovers to take with me to eat next Thursday at the picnic. Made this today, yum! Topped with your Nut-Free, Oil-Free Vegan Cheese Sauce for a creamy finish as we had no ripe avocados. Perfect for summer while also hearty enough to enjoy in the colder months, too.

It's a excellent recipe Joey and the thing I love about your channel is that the recipes are oil free 👌 because I don't want to eat oil. I prefer wholewheat pasta because white pasta is ultra processed and there is evidence that it develops cancer cells.Taco salad is perfect for the summer 😋. Love 🥰 the video and love 💕 Joey.
Hi David. Thanks for always commenting so positively. Yes I agree with whole wheat pasta. This was wheat pasta from Costco so I was fine with it. We font eat white pasta either. It's funny, the last time I used oil was a few years ago and I still have the big bottle of it from Costco at the top of my pantry. I can see it every time I open the pantry but its out of reach with all the other stuff I dont use often. I should probably just throw it out because it has to be expired by now. Instead of lettuce I like to use cabbage that I have grated on a medium hole. Purple and green adds extra color
