Stir vigorously with a WOODEN spoon: or chopsticks- remove from medium/high heat after putting in the baking soda: when it starts to look like the color of peanut butter (or whipped coffee) place back on flame for 5 seconds- pour onto wax paper and let sit for 30 seconds, oil the bottom of any flat surface you’re using; wait another 20-30 seconds before placing in your cookie cutter: let dry and then remove from wax paper.

for anyone that needs it:
-on low heat, mix 3-4 tablespoons of sugar with wooden spoon/chopstick
-stir until it has become liquid. try your best to get all the clumps out
-(optional, but i personally turn off the heat here because it burns very easily and tastes horrible when burnt)
-add a pinch of baking soda. this will turn it light brown and give it a fluffy, whipped consistency, hence making it "dalgona"
-pour onto a surface coated in sugar. this will keep it from sticking.
-(optional) sprinkle sugar on top (again, so it doesn't stick) and press down with a flat surface
-(optional) use a cookie cutter or whatever you have to make the shape, and you're done!
note: many people say to use oil to reduce stickiness, but i have found that it dissolves the sugar, making it even more sticky and also making the candy wet :( use sugar like you use flour when kneading dough

Hi just a Korean bypasser.
As a quick tip, dalgona isn’t meant to be made in large quantities. Usually you would make it in a ladle or very very small pan.
If anyone wants, I can list some steps to help you successfully make dalgona without making it bitter or having it stick to the plate or presser.
me! im korean too but i would love your tips! i usually have to sprinkle flour on top of the dalgona before pressing it flat but i never really liked the appearance of it… i want a shiny dalgona and ive been tried using oil but it didn’t work well. also how do you know the right amount of baking soda to put? i put in just a pinch but a small amount change makes a big difference and there were only a couple of times i got it just right, not too hard and not too bitter.

- *Slightly heat a few spoons of sugar.* **Don’t make it turn into a liquid, just heat it enough so that you see the sugar beginning to look somewhat crystaly.
- *Pour some of the heated sugar onto the plate* and spread it out evenly. This will prevent any sticking.
- *Use water to wet the presser* then *coat it with the heated sugar.* The heated sugar really plays a big role to help with sticking.
- Use a 20:1 ratio, but I know this is really confusing, so *for every three spoonfuls of sugar, use a large pinch of baking soda.*
** Quick tip: When you add the baking soda, sprinkle it onto the melted sugar. If it covers the whole area (NOT FULLY, YOU SHOULD STILL BE ABLE TO SEE THE SUGAR UNDERNEATH), you should be good.
- When melting the sugar, for best results, *use low fire.* As low as it can possibly get. This makes it easier for you to control the amount of heat it receives, so when it begins to get too hot, you can simply take it away from the fire for a moment to cool, then back on the fire.
- When you pour the sugar onto the plate, it shouldn’t stick to the plate since the sugar is there from earlier. Pour it slowly so you can shape it as you pour.
- *Press it down* with the sugar coated presser, rotating it as you press. This helps prevent any kind of sticking. *As you press, turn your wrist clockwise, then counterclockwise, then repeat quickly until the dalgona becomes flat.*
- Once it’s reached the thickness you desire, *remove the presser.* It shouldn’t stick to the sugar.
- Finally, after letting the dalgona cool for a few seconds, use any stencils you have to *press down a shape* onto your dalgona.
**If the sugar is still sticking to your presser, let the sugar cool for 10-20 seconds after pouring it onto the plate. Sprinkling sugar on top of the melted sugar can help, but it’ll ruin the appearance of the dalgona and make white spots all over it.

I’ve heard from a couple people that poking out dalgona is actually really hard, so this is pretty impressive
It’s hard with the ones vendors makes In streets. They make it really brittle and thin. But the brittleness depends on factors like amount of sugar vs baking power, how long you cook it, how hard you press the shape in, etc.

What is it suppose to taste like? Cause I tried it and taste like burnt sugar although the sugar was not very brown when I added the baking soda, I tried it various times with different timing but still tasted the same
It taste like burnt caramel that’s all
It's supposed to taste sweet and toasty (not burnt!) with a slight hint of bitterness from the soda(really just slightly)
Are we not supposed to use brown sugar for this ?
Also, you can use a tiny bit of vinegar instead if you dònt have baking soda, same result :)

Mix until no clumps and all sugar is melted
Add tiny bit of baking soda
Mix until no baking soda left
Put on non stick pan (u can put extra oil on the pan to make sure it does not stick)
Wait til it slightly hardens
Grab a plate and oil on the bottom and press down flat on the cookie
Make ur shape and let harden (dont put in the fridge) and enjoy :)

A tip, put in making soda when it’s a LIGHT ember color. When it’s that dark it’ll taste burnt ! It also hardens way faster if you don’t work quickly! So, light ember color, mix until light brown-yellow, THEN pour, wait a few seconds and INSTANTLY flatten, gently lift and put in your shape!
