Welcome to Madrid. In the city’s north end you’ll find the NH Collection Eurobuilding hotel.
Inside is DiverXO. The Chef responsible for this wild and crazy place is Dabiz Munoz. It opens in 2007, and in 2013 becomes the first 3 Michelin star restaurant in Madrid. In 2023, they sit at number 3 on World’s 50 Best Restaurant list.

I'm sorry , the fact he didn't pay and went with a freind of the chef, means the chef knew hi had a YT critique coming, so that makes this video completely worthless. You should go incognito next time and pay if you want your channel to be taken seriously. How many bad revews you gave for chefs who had no idea who you are. Not fair and almost dirty.
it's not worthless, a majority of his viewers just like to view the art form and are not looking at it for a review
You could have easily gotten away without mentioning that this was comped by the restaurant. The fact that you did anyway is awesome and (as someone who also wrestles with a similar dilemma occasionally) you could not have handled it better. Very impressed by your integrity- have been hooked on your content since your first month of uploads and it keeps getting better and better.

Absolutely insane. So many elements of the decor are so unique and seem to pair perfectly with some of the courses and their combinations. Each dish kept me somewhere between dying to know what it tasted like and being impatient to see what was coming next. Truly awesome stuff - really feels like we get to experience these places for ourselves thanks to your knowledge and production. Thanks as always!

Long time waited for Diverxo! Dabiz is exactly what true professionals of new generations want to do, new, no boarders, respect traditions and make a new ones. Miguel as a sommelier shows the respect to really good conventional wines that all of us want to drink, but also do the funky wines of old generations that are perfect match for this kind of cuisine. Seeing Amontillado and Chateu Chalon Vin Jaune plus champagne kills all the old fashioned opinions of old generations that are pulling down new generation style. You guys nailed it, you deserve to be on top and luckily for all of my colleagues there is recognition from Michelin, Top 50. Its not all about white gloves and white table cloths(it's 2023 not 1978)😅

Hard to find more words to describe the meal. I’m blown away by the diversity and creativity. When someone of this caliber of gastronomy performs his art, you feel it’s otherworldly. Bravo! ❤

Those kind of restaurants are just mindblowing in september I was at Disfrutar in Barcelona, the second best restaurant of this year and its not from this world, love that we can all experience this with you, a big thank you and I love that channel

Je me souviens de Joël Robuchon qui disait qu'un menu devait être pensé dans sa totalité et tenir compte de la capacité des clients à en apprécier les plats du début à la fin du repas ; quand on voit le grand nombre de plats qui se succèdent, j'ai un doute sur la capacité des clients à apprécier ce menu jusqu'au bout.

Wow! This looks crazy good! I love how unabashedly original it is! Also while the reserve wine pairing was an eye watering €600, that looked to be a truly special pairing. So many crazy good wines in it!

Alexander, amazing short, detailed, focused on in the important components love all your videos I can't get enough, have you done any visits to Australia before?
I am not a pro but I have never heard of restaurants serving wines from 70s and 50s before. The most common reason afaik is that everything that old lies in an "experimental" category, cause noone can be 100% sure if the bottle would even be drinkable let alone be an excellent wine deserving a hefty price tag. Thus I think this truly special experience deserved it's own separate segment with more in-depth analysis.

Another excellent video, Alexander. There are a few comments about not having to pay for the meal, but to refuse someone's generosity is rather churlish, I think. Especially from chef of the year ! As one commenter who's been there said - not to everyone's taste . But that's what you'd expect from a chef who pushes the boundaries with a wide range of international ingredients and techniques. I’m pretty sure the wine pairing is exclusively offered to Alex. Over 20 glasses for €600 is unbelievable good price, and they were mostly aged wines from great makers.

I am a peasant - riveting watching - I wouldn't even comprehend such an experience was it not for your channel. I like my food very simple but this is so on a level I don't understand. I wonder if I would enjoy. I'm sure I would with some prompting. The wine pairings got me though - I'd go all in there. Love this channel I think you are an excellent food critic/blogger/restaurant owner/enthusiast. We have a channel called SBS in Australia and I see your show featuring on their food channel. Quality viewing. And I don't even understand half of what you are talking about when you describe the dishes. Highly recommend this channel. You will enjoy.

Most of these dishes look rather challenging to me. I'm sure they were all delicious; I'm just not sure I would be able to eat them...
I ate here earlier this year and this video really transports me back to the hedonism and insanity of the whole experience! A restaurant for the food-crazy by the food-crazy. In fact I wouldn't recommend it to most people because of how out of the ordinary it is. Just to check, I think you were having the 'regular' wine flight right?

365€ almost seems cheap seeing the many complex dishes and thinking of the work hours that went into them
I love your video the best part for me was the fact that they server a Dr. Bürklin-Wolf wine. I used to work there love to see the German wine and even more the wine from the Weinstraße in Rhineland Palatine
I import those Luis Perez Sherries to New Zealand and no restaurants understand the magic in the bottles...so frustrating, but equally so great to see them on top restaurants!

@@AMK190768 you can be passionate about your work when you're at a circus. And sandor can spend his money however he likes, regardless of the needs of others. I'm not criticizing Sandor here but the tastelessness of the restaurant. I happened to meet a lot of rich people and please believe me, i envy none of them. The cost of being very rich is absurd. I just find the place to be incredibly kischy, and it's made that way purposely. How can one envy kitschy stuff is beyond me.
