Booking/Cooping means opening the book / coop menu to pause the game in order to correctly funnel the particles to your active character. Whenever you open one of these menus, *most* of the game pauses, however not the elemental particles created by skills (or fav weapons, enemies reaching a certain hp treshold, etc.) This is important because it enables you to have a proper rotation without having waiting for your characters to receive the particles, as in that time, your buffs fade, enemies could move / leave their stun state, or elemental application could also fade. One option to counteract this of course would be to add more Energy Recharge to your characters so they more energy without being the character that actually catches the particles, but then you'd have to sacrifice damage and we don't want to do that when we can open the book and pause time in the universe ;3
You can see this happening if you look at 0:22q and put the playback speed at .25x or play the video frame by fame. Before using his skill, Bennett has about a third of the energy needed for his burst. He then uses his skill, Alth coops/books, but you can see the particles still moving even tho the screen grays out. After the menu closes, Bennett has almost enough energy to use his burst again, and it will be filled with off field energy. But the impawtant thing here is that this all happens "instantly" and you don't have to stand around idle ingame and wait for the particles to reach you, in which time the duration of Bennett's burst would tick down or the PMA part could attack you.
