We bong love luchi+ mutton kosha, btw kosha means cooking the meat without adding extra water and it is basically cooked with the juices of the meat itself. and that special chatni is kasondi jo sarso se bnti hai
Delicious 😋 food
Kosha is a process of simmering all the onions, tomatoes, and other aromatics and the choice of protein. Generally, we donot put much masala in it, and let out the original flavours of onions. Just salt, turmeric, chilli powder and bengali garam masala is added. Bengali Garam Masala is different from the Garam masala used in other states cz here we donot use jeera or dhaniya in our garam masala.
And the whole thing simmers in low flame until the oil is released and onions are all turned into this gravy and looks amazing like this(it is more of a blackish color which says that yes I have been cooked for a looong time)

Kosha means cooking without water and low heat for a long time.For long time cooking it turns dark and it becomes very soft. And you are righ that chutney is made from mustard and called kasundi..
That mutton kosha and chicken kosha looks perfect but that biryani is absolutely not what we serve here in Kolkata

Kosha meaning is lots of masala added aur jab hum sara preparation kar lete hai and at last kadhai me water add karte hai to boil the chicken/mutton..tab the amount of water we put is pretty less. Kosha is basically slow cooked. Yes it has ghee and masala but the main flavourful comes of the meat. Slow cooked is best
