  • Today I'm making my new favorite potato salad! Made with homemade pork crackling and pickles! We have a sandwich in Denmark with pork belly and pickles (it is the best Danish sandwich!) I took inspiration from that and came up with this amazing potato salad! I hope you enjoy it!

    4-6 people
    You will need:
    ½ lbs of pork skin / the top of a pork belly (so the skin part with some fat on)
    Salt
    350 F convection 40 minutes + 25-40 minutes
    3 lbs of new potatoes
    Salt
    Pepper
    2-3 tbsp of oil
    350 F convection 30-40 minutes
    ½ cucumber
    2-3 large carrots
    6 tbsp of chopped pickles
    2 red onions
    2 large handfuls of parsley
    ½ cup of mayonnaise
    1 cup of sour cream

    Julia, I love, love, love pork cracklings! But I've never seen pork skin or pork belly sold in its raw form. I guess I've never really searched for it. I can't imagine a better recipe for potato salad! Pork rules! Great job!

      I buy a meat cut called "nakkekam" or "flæskesteg" a kind of pork roast where the pork belly piece also sits on (we just have way more meat on our cut in Denmark) and then I cut the skin from that piece and then cut the meat into pork chops for another recipe :-D It was a delicious potoato salad. Thank you John!

      Hi Juan ! Most skin-on cuts will work. Separate the skin and ,as Julia suggests,
      include some of the underlying fat. The remaining meat can be used for other wonderful dishes. Hope you enjoy!
