LOVE Meat Church, Killer Hogs and Kosmo Q! Can't go wrong. For beef Cow Cover Hot with Texas Beef is great. I use the Franks hot sauce as binder as well. Saw Franklin use it before.

I love Meat Church rubs, but I definitely preferred the Kosmo Cow Cover since it’s such a small piece of meat. Might have to try Cow Cover with a light sprinkle of Holy Cow on top for that texture 🤔🤤

A couple years ago, I was doing a 14 pound brisket, and I think our temperature gauge was broken. It was reading at 250 degrees, but the brisket was done in 8 hours 😳😳🤣🤣🤣🤣 but hey it was tender and tasty at the end of the day! But I love your input on these rubs!! Keep it up!
Haha yeah man I always say temperature and times are guidelines! It takes messing up and lots of practice to get it down. Just like with your brisket, I’m sure you felt it probe tender and knew it was ready! I love doing the rub comparisons, got another coming in a few weeks!!
I'm a big fan of both Kosmo's and Meat Church seasonings as well as Chupacabra (my personal favorite). This was a great and unbiased comparison. For Chupacabra, I like to use Brisket Magic on any beef product from steaks to plate ribs, to brisket or fajitas. I love their Ribnoxious on pork ribs as well. Killer. I'm partial to Cen Tex-style BBQ and like a lot of coarse-ground black pepper. I've taken my Kosmo's SPG & Cow Cover and split between 2 shakers and added more coarse black pepper. I love Kosmo's blends but just not enough coarse BP for my liking. Kosmo's Dirty Bird and Hot Dirty Bird is a fantastic blend on poultry. Used them at T-Day on some turkey's. Fantastic. Also love MC Honey Hog on pork ribs. Just my useless 2 cents. I encourage everyone to try them all and adapt to what you prefer. That's the beauty of bbq...tweak it, and make it your own.

Nice cook rib racks get heat on both sides like a toaster so lower on your temp so all the moisture does not drip south gravity and all plus if you have a great rub that needs pepper add pepper but you can never take it back so stick to a great rub then add your twist

It’s when you set a small amount of coals in the middle of a large amount of coals and it burns slowly! I can go into detail on a video if you’re interested!
@@GulfCoastSmoke I put the rub on chicken thigh. I figured it could be the peppercorn that is causing the heat. I used ground pepper on alot of meats but I dont even feel a thing. I will try it on pork ribs tomorrow but if it is still spicy then I might get the honey hog instead.

Holy Cow is amazing on beef ribs and brisket. I've had beef backs get done in 3-4 hours as well on my WSM.

I usually use a mix of beef broth and coffee to spritz beef ribs and brisket.

3.5 hours at 275 with 1 hour rest! Got caught by surprise, they finished pretty early but still turned out delicious!
