You mentioned not to can in half gallon jars. Half gallon jars are only approved for canning juice 😊 I also noticed you have your cans stacked behind you by the fridge. Don’t forget to mention that for long term storage, you want to put a piece of cardboard between your stacked jars. Otherwise you could have a false seal from the pressure of being stacked. I use fresh lemons. I buy them from Costco. I do this ahead of time. I squeeze the juice of the lemons, and put that in ice cube trays and freeze. This way I have Lemon juice when ever I need them.

I sometimes put tomato juice in the jar to not have any empty space in the end when I do cold pack. Hope that is ok.
I've done the same thing. You can also top it off with a bit of hot water to fill in the space. :)
If you leave the skins on don’t you have to pressure can?
