We have been running Criollo cattle on our ranch in SE Arizona for the last 12 years. We like them a lot. We sell a fair amount of Criollo as all natural range raised beef. Steers are retained and grazed on desert grassland pastures until about 32 months of age. This means running a few less cows, but very inexpensive cost of gain on the steers. We slaughter steers weighing 1100-1150# and typically grading choice with lots of marbling and consistently testing very tender according to USDA Warner Bratsler Sheer Force Test standards.
