While I see the point that you're trying to make, please realise that the piano is (supposedly) capable of replicating a previous musician's performance perfectly, which means that if a human was used to record and then play the performance back, it really wouldn't be any different. With this I'm trying to explain that while a pure MIDI file would certainly not sound excellent, a human's actions can, therefore allowing the robot to do it too.

Even minute changes in fingering like placing your fingers slightly flatter to use the flesh of your fingertips more can change how a note sounds - of course this is because you're apply the force more steadily & evenly to the note and you're unable to strike the key as hard (since you can't lift your fingers as high nor have the weight of your hand above the key) and hence it should be able to be captured - but I don't know of any formats that can.
