    I've been searching for years where this scoby thing comes from... I even stopped drinking kombucha. You are the first person on the internet who mentions how to make kombucha from scratch! I'm gonna make it from scratch! You earned my sub. Thank you

    I've made kombucha for years. Sometimes I have too many scobys so I chop them up for the chickens. They love them so much they fight over them.

    I love Kombucha. Just made some of elder flowers. Very tasty. A nice red drink I made with green tea and hibiscus. Also we can add any herbs. It is good to try to process medicinal herbs this way because it's tasty medicine.

    I have very little knowledge of Kombucha but I really learned a lot from your Video. I appreciate the way you have kept the process easy and not difficult at all. Thank you Ted, I hope to be able to create my own Kombucha and get rid of the "trash".

    Very good video. I am making kombucha now and it really is enjoyable and worthwhile. I need to experiment more with the flavouring, bottling and gasification though as I have limited success with that.
    This is the first time I have seen someone flavour the tea before fermentation. Thankyou for sharing that, I will try this next time. Ginger is probably the best flavour for a fizzy drink in my opinion. Ginger beer was always my favourite soda drink. (Of course that is also another fermented alternative to Kombucha)
    I agree with the sentiments about soda drinks. I have found another easy alternative without fermentation. If you have a slow juicer, (with an auger), you can juice a large quantity of ginger. So about a kilo of ginger gives around half a litre of very strong raw ginger concentrate. Mix by volume 4 parts ginger to 3 parts sugar and stir, (so 1 litre ginger to 0.75 litres of sugar). Refrigerate and when you want a fizzy drink, mix a very small quantity with soda water and squeezed lime. It lasts ages and costs pennies. You can drink it with non soda water also of course.
    Thank you for the inspiration. Could you tell me if flavouring with ginger before fermentation causes the scoby to have a shorter lifespan or if it corrupts the Scobys purity in any way? Most youtubers tell you not to flavour the tea. They also tell you to limit the tea to black green and white teas. Can you tell me what other teas have worked for you and what is your favourite?

    Thanks for your video. Can you explain how to make scoby in detail? Do we need to close the bucket air tight? or slightly ventilated? need details for start up like me. Also please let me know how long it will take to complete kombucha after adding Scoby in it?. Thanks in advance

    Turn the knife blade away from you when smashing ginger. Also Coffee filters held on Jar with string or Rubber band makes good Breathable lid and keep dust out.

    Sir Jon can we make kombucha out of pineapple? I doubt when u say sour fruit, pineapple when ripe it has more sweet taste than sour. Secondly to make scoby do we need to boil water or just a simple water 10% plus fruit 3% plus 1% of sugar n store it? What about the tea ?

      Pineapple is very good to make the starter for kombucha. We use 1:3:10 with normal water . Don't need to boil. Let it ferment 3-6 months if the temperature is not too cold the scoby will form itself on top of the water in the jar . You can use the jelly scoby to make Kombucha for a long time.

    Thanks for the video, if I make scoby from green apples like you mentioned do I only make fermented apple drink from it or do I used it to make kombucha tea or is it both?

      I save the parts of the apples we don't eat and put them in the freezer. When i have enough I add it to a ferment I started years ago. Saved apples with sugar and water. Not the tap water with the chemicals. I keep bugs out using a paper coffee filter and rubber band. It allows the ferment to breathe.
      The kombucha is made with tea and sugar. If you combine them you're making apple flavored kombucha tea.

      Buy a kumbucha drink and add some to sweet cold tea then keep warm and dark. Scoby will grow in 2 weeks. (Don't close lid tight)

      It is a mixture of bacteria and yeast form themselves in to a kind of jelly. They change sugar in to vinegar and alcohol and other things.

    Master, you are using Brown treated sugar Which is a poison since it has 2-3 chemicals. Instead, May I suggest Pure, Good quality Honey or Unrefined, untreated Brown sugar or Dark brown Cane sugar powder... Refined White Sugar is 200% Poisonous which people please avoid..I also noticed that you are just crushing the ginger a little Only, but if you add scrapped Ginger after skin-peeled, it would give more flavour so you can Use half quantity of what you actually Used...

    I’m addicted to these videos. On the tiny piece of land I got in Samui I am thinking of ways to get by and every time I watch one of these videos I want to do exactly what Jon is doing 😂 I Have a bar that I pay huge rent for and make no money from and don’t even want it anymore. Saw the video about clay and want to get clay from the land to make clay face cream, now I want to make kombucha and also grow fruits and herbs 🤣 also the clay house looks great but in order for me to get out of the bar and move to my land It requires a house number which I don’t think I would get unless it’s a certain grade of building 🙁 but after watching more of these videos who knows what I will want to do next 😂 the original plan for the land was to build 2 small houses and sell one which would cover the cost of my own house essentially getting a free house but Samui is starting to get overly built up already and more and more people are leaving every day. Many thai people who lived here are returning home also. Seems like the island made itself dependent on tourism to survive which is a shame because it’s a paradise island. Jon’s other video about sufficiency was a perfect example of how people should aim to live because now is a time when people struggle a lot.

    1. Is it free of pathogens? 2. How are the wine bottles cleaned when used over and over again? 3. How are these stored? Even yoghurt and probiotic drinks can be dangerous to consume when they are not properly stored. 4. How can this be good for health when so much sugar is in the recepi? Thanks. #Germaphobe

      Numerous implausible health benefits have been attributed to drinking kombucha.[7] These include claims for treating AIDS, aging, anorexia, arthritis, atherosclerosis, cancer, constipation, and diabetes, but there is no evidence to support any of these claims.[5][7] Moreover, the beverage has caused rare cases of serious adverse effects, including fatalities, possibly arising from contamination during home preparation.[8][9] Therefore, it is not recommended for therapeutic purposes.[7][10]

      Adverse effects associated with kombucha consumption include severe hepatic (liver) and renal (kidney) toxicity as well as metabolic acidosis.[45][46][47] At least one person is known to have died after consuming kombucha, though the drink itself has never been conclusively proven as the cause of death.[48][49]
      Some adverse health effects may arise from the acidity of the tea causing acidosis, and brewers are cautioned to avoid over-fermentation.[8][50][33] Other adverse effects may be a result of bacterial or fungal contamination during the brewing process.[33] Some studies have found the hepatotoxin usnic acid in kombucha, although it is not known whether the cases of liver damage are due to usnic acid or to some other toxin.[46][27]
      Drinking kombucha can be harmful for people with preexisting ailments.[51] Due to its microbial sourcing and possible non-sterile packaging, kombucha is not recommended for people with poor immune function,[8] women who are pregnant or nursing, or children under 4 years old.[33] It may compromise immune responses or stomach acidity in these susceptible populations.[8] There are certain drugs that one should not take at the same time as kombucha because of the small percentage of alcohol content.[52]
      A 2019 systematic review confirmed the numerous health risks, but said "kombucha is not considered harmful if about 4 US fluid ounces (120 ml) per day is consumed by healthy individuals; potential risks are associated with a low pH brew leaching heavy metals from containers, excessive consumption of highly acidic kombucha, or consumption by individuals with pre-existing health conditions."[44]
