Hi there, for the filling there shouldn’t be too much difference except the taste won’t be as strong. I wouldn’t recommend sprinkling instant coffee on top of the macarons as garnish though since the instant coffee granules won’t survive the oven!

Double cream in the UK have a pretty high fat content at 48% so try something with similar fat content. I have also used cream substitutes with less fat at around 35% which also worked for a filling which isn't quite as smooth.
Jason Ong Jia Sheng that should work! Make sure you stir the chocolate gently and not to bring the cream to a complete boil, otherwise the ganache will split. Good luck!
Of course! The only reason I chose dark chocolate is because macaron shells are already quite sweet but there is nothing stopping you from using milk chocolate!

Thanks! I am no coffee expert but the darker the roast the stronger flavour so try using a darker roast. Hope this helps!

how about using whipping cream? the whipping cream i found content around 40% fat

Yep! We call it icing sugar here in the UK but it is more commonly known as powdered or confectioners sugar everywhere else.
