HOMEMADE GNOCCHI WITH AN AMATRICIANA
Ingredients:2 1/4 cup of Flour
4 Russet potatoes
1 egg
1 can San Marzano whole peel tomatoes
Guanciale
Pecorino cheese
Salt
Basil
Black pepper
Instructions: Making Gnocchi is easier than it looks. Begin with boiling your russet potatoes until they’re tender with the poke of a fork. About 40 mins. Take them out and let them cook down. Remove the skin, and use a potato masher thing. If you don’t have one, you have to find a way to smash them to a mash potato. You don’t want any chunks, even small ones. In a mixing bowl, add the mashed potatoes, and your flour, then make a well in the middle for the egg. Stir it together then kneed it into a ball with your hands. Split into 4-8 separate pieces and roll out into a half inch thick roll. Cut the individual pieces. To give ridges, roll the gnocchis up the back of a fork.
For the sauce. In a pan, on medium heat, cook the guanciale pieces evenly until fully browned. Take it out and leave some grease. Crush your tomatoes by hand into the pan with the heat off. Put the heat back on, add a little salt and pepper. Cook for 10-15 mins on medium low heat and stir together. Add some basil. Cook the gnocchi till they float then add to the pan. Add some pasta water and pecorino. Combine together and serve! THATS IT. BUON APPETITO BETCH
