Hi Louise, I've never tried quinoa before. I don't have a Ninja Foodie, so I will make it in my Instant Pot. Also I made your blueberry BBQ sauce which is so delicious. I made zucchini fries in my air fryer the other night, so I thought I'd try the blueberry BBQ sauce as a dip for the zucchini fries. OMG so glad I tried it. It was so yummy!!!!!
More, more, more! I've a kid who's vegetarian... so... Also, I'd probably saute 2-3 lamb chops for myself and the other kids prior b/c of the Mediterranian flavors. Loving this! PS I wonder if orzo would work?
Lamb would go great with this dish! I haven't cooked too much with orzo, but I think it takes a little longer than the quinoa. What you can do is toast it like I did with the quinoa and then add the water/veggie base or stock and let it boil for about 3-5 minutes before adding in the veggies. Then proceed with PC'ing. That way it has a head start on cooking. Let me know if you try it!

I made it tonight! Good news: the flavors were amazing. Even the 12 yo loved it. Bad news: the fresh veggies were mush (even the thickly cut carrots). In the future, I'll just steam the veggies in the microwave and include those at the end. BUT happily, my kids (all 3) apparently love quinoa and I converted the 15 yo to feta! Thank you! (The olives and juice were a stroke of genius.)
I cannot wait to make this recipe! I’m a little worried as my pressure lid doesn’t seem to be locking recently... I specifically remember a sort of locking sound when you turn it to the end to meet up before, right Louise?
This looks really tasty. I would omit the squash, not a fan of it, but love your recipes because we can add what we like. I've been looking for an easy way to clean the lid....any help or suggestions would be awesome.
That would be pretty tricky. I guess it could be done if you like broiled lobster tail. I prefer mine steamed and they don't take that long, so I would broil the steak and then steam the lobster and the asparagus.
Can you tell me how many ml a cup is? I bought some cups as we don’t use that measurement here in the UK but it looks much smaller than the amounts you are using.

YAY! Yes, I do prefer Minors over better than bouillon. I think it has a deeper vegetable flavor and not as salty in my opinion. I only use Minor's now because all of their bases are wonderful.

It doesn't really make a sound, it just turns into place. I would do the pressure test and that will tell you if it's working correctly.

There really isn't any easy way that I have found to clean the lid. I keep working on a solution though!

If you wanted to use fresh squash and cauliflower would it work to pop in freezer for an hour to delay cook?
The cauliflower might work, but squash cooks too fast.
