    I'll show you how to make a classic, authentic French pastry cream, known as crème pâtissière.
    This was one of the first things we learned in pastry school way way back. This pastry cream is found in many French desserts, such as chocolate eclairs, tartes au flans, including fruit flan ( fruit tart ) milles feuilles ( a direct translation meaning "thousand leaves" because we use a puff pastry, and it has so many layers or "feuilles".

    this is the PERFECT pastry cream recipe. Everything is well proportioned, leaves a little room for error without even noticing...I like my cream to be less sweet so I had used 3/4 cups of sugar instead and I hate the aftertaste of vanilla so I used 1 tsp of vanilla instead and it came out very nice. I used this cream to make napoleon. On the last topping of the cream, I crushed tea cookies and went all over. It was DELICIOUS!

    Update: I made this tonight, and WOW!!!! Beautiful flavor! Absolutely delectable with an incredibly smooth and luxuriously creamy texture! This is one I will surely use from here on out!! One suggestion though, my son, who is not much for overly sweet stuff, said he found it to be too sweet, and he loves custards/puddings, so he suggested I do it again but use half of the amount of sugar, like 1/4 cup to 1/3 cup of sugar! I think it would be beautifully balanced.

    I made it for the first time today and I'm so happy it turned out so good. I watched many videos before and for some reason this video caught my attention. I think its the clear voice and easy instructions. I had no cornstarch but substituted it with tapioca starch. I'm so happy 🤗🤗

    Hi DivaUnderCover, hmm, I don't understand your question, this video recipe show you how to do pastry cream. I show you how to make this from start to finish. You can use this pastry cream in cream puffs, or chocolate eclairs, Boston Cream pie, etc, you can put it into any sort of cakes you wish, it is very versatile.

I wish you well in the business, you have a fantastic journey ahead !     Hi duckieboo, yes, all pastry creams are custards, however are different depending on the amount of eggs vs cream or milk used and how thick or thin the final product is. For example crème anglaise is another custard based cream, but is super thin, but technically it's also a custard, because it is derived from the same ingredients.     I just made the cream for a 3 tier cake im making, this is delicious I just used 3 times more quantity of each ingredient and it came out perfectly

    I went back into the café yesterday and they changed the filling to a whipped cream filling although it was good I enjoyed the other filling much better I will try your recipe when I try to make the rum baba your filling looks very similar to their original one

      Breezy Fangirling Hi there, thank you for watching, if you follow the way I did it, it will be pipeable, - if it is too thin, put it in the fridge, this will really make it much more stiff and you will be able to do it. Chill it in the fridge, then just rewhip it a bit and bingo :-)

    Hi DivaUnderCover, traditionally you don't use this pastry cream, but at home, why not ! You can fill it with anything you like, or, what you can do also, is do 1/2 pastry cream and 1/2 whipped cream, mix them together and you have a really nice texture. To fill your horns, you fill a pastry bag and now fill the cones, it's the best way to do it. If you don't have a pastry bag, you can use a ZipLoc style bag to do this easily also.     Hi Mary, I guess every little shoppe will have their own way of doing it, their own spin on things, but I'm sure you will be fine using the traditional fillings. Metric is really simple to use, most if not all professional kitchens even in the United States are using the metric system, or are adopting it. It's super simple... 1 cup = 250 ml. 2 cups = 500 ml. A liter is super simple, it's 4 cups, 1000 ml or ( 1 liter ). I grew up with the metric system and swap between the 2 systems.

    Hi again tgchism if you want to put chocolate into a croissant, that can be done just before baking. This is what we do in the pastry shop, long slender pieces of chocolate are rolled into the unbaked dough, then baked. Now - if you really want to put pastry cream into a croissant ( and it sound great ! ) -- bake the croissant first, - then pipe the filling into the croissant. You can visit a baking store, and pick up a piping tip specifically for this purpose. This is how I would do it.

    I'm about to make this again. I have yolks left from the swiss meringue butter cream I just made. WE have four chickens who lay eggs every single day. Need recipes to use them up! lol. Love this recipe, Mark. It's so creamy and beautiful.

      It's amazing. We have four chickens. Three started laying mid January. The other is about to start, she was a bit younger. They're so much fun to watch and their fresh eggs.. so different from market eggs.

    This is a French pastry cream, and yes butter is used in this recipe. It does add an extra level of richness to the pastry cream. You may find recipes that don't use it, what is fun is taking a recipe and change it so you can make it yours, you may find something that you really love. This recipe though, yes, calls for butter :-)

    Hi Mary, I haven't made this in many years ( I must be honest ) I guess I should do a video on rum babas. By the way, never ever let metric measurements scare you away, I only became accustomed with the metric system when I was about 16 years old, but it just makes so much more sense. It's so much easier to use, and once you become familiar with it, you say "wow, that' so easy " but I still know what " a cup" is, or a "teaspoons " is :-)

    I used a recipe that is almost the same as yours but used less thickening agents and a combination of flour and cornstarch, it was never as thick and lovely as yours and couldn't ever hold up when mixed with whipped cream. How does yours do for a creme diplomat? Also is the initial vigorous whisking of the cornstarch and egg yolks essential? Thanks so much, your videos have helped a lot.

      It works well with a creme diplomat, it's nice and thick and accepts the lightness of the whipping cream well. If you have a pastry cream that is not as thick as mine, you will not want to put as much whipping cream in, as this will really make it much less thick. Try out my recipe, I know you will like it, and whisking in a recipe like this can't hurt, it keeps everything nice and lump free.
