Sous Vide and Smoked Pork Steaks with Sweet Chili Sauce Glaze

  • So simple to do and such great results! Sous vide lets you tenderize the pork without drying it out. Placing the pork on the smoker wet after cooling it down in the ice bath helps the meat attract much more smoke. The sweet chili sauce glaze made these some of the best savory and sweet pork steaks I have ever made!

    I have a couple Berkshire pork collars in my freezer. I was thinking making pulled pork from them would be a disservice. I think you've shown the way I'll cook those! Thanks for the suggestion Darren.

      yeah, i like to change it up also! This is a great way to cook them, just make sure to trim them up a little more than you would if you were just smoking as a good bit of the fat will not render..
