tamagoyaki isn't supposed to be browned, especially on the inside rolls. The center will dry out by the time you finish adding layers. Your pan is too hot and you're cooking the layers too long.
Agree, when I was in Japan a couple years ago I tried one of these omelets, it was the best omelette I’ve ever had. It wasn’t brown at all, I think this guy had the temp a wee bit too high.

Me being Asian sees oyster sauce, thank goodness I can use oyster sauce for the omelet (I have like 3 bottles of these at home) I made this omelet and it was amazing thank you 🙂
For an omelet like that you really need to add some good spices like garlic powder, oregano, black pepper from a pepper mill, etc. because egg whites alone have a very mild flavor so there needs to be needs to be something in there to give the egg whites & veggies some punch or else it tastes like you're eating nothing but a mushy bland rice cake with a few veggies tossed on top. The only spice I'd recommend skipping in this case is salt because that only makes it taste even more like a rice cake.

The Emeril one is about how I make an omelette, but I was taught to use buttermilk instead of heavy cream. It doesn't really take away from the normal egg flavor, and that's how I like my omelettes. That said, I really love Japanese rolled egg omelettes, omurice, and Asian flavors with eggs, there's something really homey and comforting about it to me.

When I do omelettes (and I feel really motivated), I caramelize some onions, and prepare in the meanwhile the egg dough - some eggs with milk, corn, spices, parsley and maybe tomatoes. Then I put this dough over the onions and leave it ceased in the closed pan for a few minutes. Just in case, somebody wants to try this out :) Enjoy! :D

I just use eggs, dash of milk, salt, pepper, garlic. Then I cook it and make it flat, put cheese, chive, onion and capsicum (red pepper for americans) in the middle chopped, then I fold over one side and the other cook it more put on a plat more cheese, salt and peppers and it tastes great
