      Hi, thanks for commenting 😊 You can definitely skip sugar and these onions will still be delicious.
      I do add some sugar in this recipe to balance the strong flavours of onion and vinegar and for a bit sweetness (thats how we prefer to enjoy) 😊 If I am using any spices/aromatics like peppercorns, star anise, bay leaf, herbs etc while pickling the onions, I usually reduce or skip the sugar entirely. 😊

      Hi! yes, once the pickling mixture has boiled, remove it from the heat and immediately pour it over the sliced onions in the jar or container. You want to make sure that the onions are fully submerged in the pickling liquid to ensure even pickling. 😊
