Open top wild fermentation mean they take the fermenter outside and leave it open to the elements, this allow the natural wild yeast to interact with the wash .
Im big fan if the barántúil range from killowen , they dont just do potstill they also do mix mashbills to , they done a 90% rye and it was amazing 🤤
And you are correct it has to be min 3 years to be called whiskey in ireland

Good review. What contributes to the high price given about 3 to 4 years old? New, craft distillery overhead?
My best guess is they just don't have the investors to put up enough cash to let them blow this up, so they're trying to boot strap it. So insane prices are part of the game. At least they've got what looks to be a pretty good start. This stuff next to a really refined single malt isn't going to hold up, but it's got nice flavor and already doesn't come off like straight off the still whisky.
Barantuil is bar-an-tool. Loosely translating to "authentic".
It's a very small operation. Until recently where they cleared a cask room to put in another still, the production space could be filled by 2-3 cars.
It is pricey, but has an enthusiastic following who will happily buy it out to join the journey as Killowen ages. It won't ever be able to supply everywhere that wants it and long fermentation times/small size means low output so need to recoup some costs on the bottles.
The are pushing historical Irish mashbills (pre-1900s) as uncovered by research championed by Fionnan O'Connor. Also pushing for a renewed enthusiasm for poitin (which is to Ireland what moonshine is to America in a vague way). The poitin is essentially some version of their base spirit which can be bought too.
So far Barantuil has come out with PX casks, Tawny Port casks, bourbon casks and the white cognac casks. There has also been some smaller bottlings playing with rye.
Killowen has inspired a lot of hype and excitement in Ireland with good bonding/blending of sourced liquid and though young and pricey, their own liquid has been phenomenally interesting.
