    I love this video, the clip on vinegar production is something new that I've never seen. The history of Chinese food is so rich it's nice to see someone dig into this.

    I am from yuci (small town near taiyuan), and I’ve been living in Canada for 6 years, but still, my daily staple food is noodle. I have a skill to make noodle, so I bought and brought a noodle maker(面条机)here with me, and each time when I make noodle, I just pour flower and water into the machine with a proportion. Lol, that’s the easiest way for me.

    Another great video! Found this channel last week while looking for videos on Taiyuan. I was born in Taiyuan but raised in Canada and haven’t been back to my hometown in so long. These videos are so informative, I love the cultural and experience takes. Really want to go visit once we are allowed to travel again! Thanks for showcasing Taiyuan 😊

    Did'nt know they have a vinegar culture. Or that there are so many types of noodles. Over 360?? Mind if I borrow that book of yours?? 😉😉
    I'm also surprised by the 'drinking vinegar' instead of alcohol culture.
    Can you find out more to why? Artem?
    Was it to clean ones body toxicity or something?
    Anyway good video. Loved it.

      I think vinegar can help boost your appetite and help with digestion. some food are sorta oily so adding some vinegar can make it tastes less oily but refreshing, while some food are very spicy so adding some vinegar can balance the flavor and make the food tastes mild. Several places in China produce vinegar but I think Shanxi’s is the strongest and the most authentic! 😉

    actually we also have white vinegar, different tastes. i think the one you are seeing in shanxi originated from it and it's called ''chencu''. the russian vinegar we call it white vinegar ''baicu''
