One way to use grav is on ryebread with slices of egg. It's a very tasty combo! You can also use Juniper berries instead of black pepper, and using whitefish instead of salmon is a good choice. Whitefish is less fatty and softer.
Are you allergic to all fish, or just salmon? My daughter is allergic to salmon only (as well as many other "red" foods. Haddock or Bream could be used instead.

I was always told not to use Atlantic Salmon for Gravlax as the fat in it can go rancid. I mostly use Sockeye as it has much less fat.
