There's an amazing cafe in Sacramento that I used to go to called Scorpio that offered single-origin espresso as a substitute for an additional price (similar to alt milk). They're a multi-roaster that brewed a lot of Sey of La Cabra. This was a unique approach to getting people to try different single origin espresso in any drink they like. I had a lot of cortados there where the fruity or floral notes of a coffee would cut through and go really well with milk.
Very interesting topic and discussion! Would you all say there should be a caveat in the pay of owners and employees (subsequently the menu prices as well) that gradually increases at the rate of inflation?
Great topic! Our business does primarily food, so I know it’s different with coffee.. do you all think that $1,200-$1,500 days are actually doable with only 2 baristas? I’m saying this because it obviously decreases profitability a lot once you have to add that 3rd person, but I find that we have to do it often to keep up with the quality of service that we want. 🙏
Just To chime in, I work for a coffee company in the southeast and we have a 2 barista cafe that regularly does 1-2k days (just This weekends did $1,600 in only a morning). It can get crazy but with the right layout, training, and menu it’s very doable.
on a real note: dunwoody cafe is such a beautiful lovely space (totally nonbiased comment) and it is a little piece of heaven for me erryday. y'all did a great job :-)
