You given beautiful and useful tips, especially mango with salt atleast 2 hours and air tight bottles, dry spoon. i followed what you said, more than a month using mango pickle. Previously within one week it will spoil. This recipe exactly my amma recipe. But i don't follow above mentioned three tips. So many days i don't know why it is spoiling within a week. Thanks. if possible do lemon pickle recipe.

Raw mango - 700 gms
Salt - 3 tsp
Asafoetida powder - 2 & 1/2 tsp
Fenugreek - 2 and 1/2 tsp roast and grind
Sesame oil - 100 ml
Mustard seeds - 2 tsp
Kashmiri chilli powder - 4 tsp
Do it as shown in the video. Let it cool down and put in an air tight container. Leave it out till the next day to absorb and then keep it in the fridge. Can be used for 4 months. Should always use a dry spoon to serve.

Very tasty pickel. First i try with raw mango. Second time I try with my home grow bramley green apple. Taste is good . From Ireland.
After adding salt i kept it for 2 hours. Whether, i have to discard the water which come out of salted mango or keep it as such with it. I did mango pickle. Good taste and nice aroma. Thank you.
