In divisoria, pink bagoong is fake bagoong. It is usually mixed with sapal ng niyog and is very salty. That's why I always use brown bagoong or those called laon. Anyway, thanks for the recipe, it's my wife's favorite and we usually buy it in quiapo. We'll try your recipe perhaps this coming week.

Im highly allergic to crustaceans especially shrimp (bagoong), can i omit the bagoong? I grew up in Bicol and after we moved to Manila, I would always ask my late father to bring home Santol Gulay for me.

Mas maganda if medyo maasim ang santol na gagamitin. At mas masarap kng tinadtad ang santok pra anduduon pa rin ang totoong lasa ng santol, unlike pag ginadgad nawawala na lahat ng juices. Better to try it next time Chef, thank me later! HAHAHA
June 27, 2024: I remember our relatives from Laguna usually give us bottles of Sinantolan yearly when the Santol is in season. I just love dishes with Gata but very sinful kasi mapapalakas ka sa kanin. 😅
