DS is focused more on Data + AI. AI is strictly Just AI. It's like an MBA with a concentration in Finance vs MS in Finance. One is generalized + focused while the other is plain focused. It depends on your goals & interest. If you want to learn Data & have an interest in programming, statistics, visualizations, with a little bit of AI, then DS. If you want to Only niche yourself to AI, the this degree.
Is this a viable option for someone with an unrelated bachelor (biology) to apply to or is it geared toward people with a background in computer science?
So long as you can get up to speed on graduate level statistics and can work with linear algebra and calculus, and you can code, sure. But make no mistake about it, the heart of it is Mathematics. All that wizardry has math under the hood. That's primarily what you would be signing up for.
