Yes you can do anything in kotlin now a days. For backend you can use ktor (complete kotlin based) or spring boot(java based with kotlin support) and some other frameworks also have support for kotlin.

For internship, you should create some projects that showcase all your learnings. Do DSA and little bit system design as well
