I went to settings/apps/gboard and hit ENABLE. I think I accidentally disabled this not knowing what it was.

This is what worked for me. I went to google and used google voice and said, 'keyboard'. Then I copied that word, 'keyboard' and went to settings. I pasted it and clicked search. I selected 'keyboard & input methods' and then I clicked on 'Default input method' and finally clicked on 'TouchPal Custom Version' and it worked. I got my keyboard back.

How to fix missing keyboard not appearing, go to settings and start typing. Er, with what if keyboard is missing?

I don't have a keyboard on my settings either.
It's useless help if you can't even do the first fucking step.
One fix is to make sure GBOARD is enabled. SETTINGS/APPS/GBOARD
I only run the original keyboard and by enabling it, my issue was resolved.

When I SPOKE enable gboard into my useless phone, it came back with nothing. I can't even do a factory reset without a keyboard.

I am not normally this harsh and mean, but someone has to say it:
This video is obsolete and not possible. If you do not have a keyboard, you can NOT use a keyboard to find a keyboard. Impossible!!!
Instead, first restart your phone. If the keyboard is still missing (and you can touch things on your phone) go to settings. Then go to system, click languages, then a few lines down click on keyboards. Make sure it is visible.
This info is for my Android/smart phone (T-Mobile Revvl 6 pro). Yours may vary just a bit.
But hope my info works for you and helps.

When I play Roblox and chat the keyboard will show for a millisecond then it disappears. It won't show again.

I think you missed the whole point. I DON'T HAVE A KEYBOARD TO TYPE WITH...AT ALL! If I could type the word keyboard, I wouldn't even be watching this video in the first place.
