How to make Date Sugar Thermochef recipe cheekyricho

  • Using only one ingredient, High in Fibre, all natural great tasting, gluten free Date Sugar. Perfect for sprinkling on cakes, cereal,yoghurt, rice dishes & ice cream. Do give it a try.
    INGREDIENTS:
    DATES that's it just DATES!!
    METHOD:
    cut your dates in half to ensure there are no pits, roast in a single layer on an oven tray in a 170 degrees celsius oven until the are darker in colour. Watch they don't burn. Remove from oven and allow to completely cool they should sound like rocks when shaken together. Blitz in the Thermochef for 30 seconds at speed 3 increasing to 10 for 30 seconds until a very fine powder. Don't inhale the airborne Date Dust. Its much better for your tummy than your lungs. Store in an airtight container.

    Dr. Greger has a video about all types of sweeteners and date sugar was #1 and molasses #2 both far far far ahead of the rest. I love dates, they are my healthy candy snack nowadays 🍭🍬

      Yes Martin it’s actually quite sweet if you stirred into coffee, the fibre in the dates rehydrate and you end up with this caramel delicious fudgey stuff in the bottom it’s sweetens the coffee and it’s really delicious, I finish it with a spoon but you don’t have to.     i've been considering this and yours is the first video i've seen. i see some people duplicated your temperature settings and times and claimed to have ended up with burnt, bad tasting dates so it may be suggested that people bake according to their appliance capabilities and also altitude levels of where they live as that highly affects time and temp settings. thanks again.

      Thank you so much for the helpful feedback. I never even considered the altitude levels, I know water has a different boiling temperature the higher above sea level you are. I was thinking it may be the moisture content & variety of their dates or a fluctuating oven temperature. Your feedback certainly offers another plausible explanation. You can use this recipe in place of sugar when baking, sprinkled on oats, added to tea or coffee the date sugar rehydrates, sweetens your drink and leaves a lovely sweet caramel Like sediment in the bottom which is full of flavour, fibre and nice to finish with a spoon . I sprinkle it in yoghurt on ice cream, whipped cream and custard. It’s delicious. I know you will enjoy it. Thanks for watching.;-))

    tks for recipe but do not have oven or dehydrator alternative I could make them tks.

      +Nancy gibbs thank you for your enquiry. I do know you can dehydrate foods in a frost free fridge but it could takes several days to weeks to dry them enough to make this recipe. Depending on your climate you can put them in the sun, covered with a cloth or paper towel until they are dry, again this would time consuming and unless it is very dry where you live the level of success might vary. Sorry I can't be any more help. I have dried things wrapped in paper and covered with a thick layer of dry raw rice but this is a very large quantity to try this method which I've never tested.     Wow thank you for such a simple and easy instructions on how to make date sugar. Who needs to buy a packet, you can make them at home. Is Date sugar the best alternative to cane sugar? I am on the keto diet and have tried stevia and swerve which is Erythritol Both these sweeteners, give me indigestion and headaches. I am looking for a sugar alternative. Is Date sugar better then Monk fruit sweetener?

      Oh my Marianne, I'm not sure, perhaps a nutritionist would be best to be able to advise you there. I try to stay away from artificial sweeteners and absolutely gate the taste of Stevia. Dates are still full of Natural sugar, as is cane sugar but it has lots more nutrients and fibre than cane sugar. I think it's a healthier alternative as well as having a nice caramel like taste. Sorry I couldn't be more help as I have absolutely no experience with monk sugar or swerve. Thank you for watching and your question.;-))

    How long does it keep for? Or how long as far is the shelf life good for?

      I keep it in a cool dark dry place in an airtight container and it will keep more than a year. In humid climates I would store it in the fridge. As it’s a dehydrated product it has an excellent shelf life. Hope that helps, thanks for the question and for watching.;-))

    What blender is good for use in the US. Would Ninja work? My Hamilton blender dies not

      Gee Anjna, we have a totally different electricity supply system here in Australia, 240volts as opposed to your 110 volt supply. The Thermochef is no longer available in Australia, I am familiar with ninja products here and love them. Thermomix is a very strong, reliable blender, a vitamix or blendtec would be perfect for high powered blitzing as well. I’m sure there are other brands but these are the ones I could personally recommend. Thanks for watching and posing your interesting question.;-))

    Itd been very fun to watch your video and learn how to make date sugar! Although having American terminology is getting a " blitz" just going into a blender or a food processor? I could tell that you have a high grade machine but not sure what it is 😅thank you again for this video!

    could you not dissolve in water and strain, then dehydrate to allow the sugar to form naturally? seems like this would be the best way to get rid of the fiber for baking

      Yes you probably could, although there are lots of health benefits to be gained by including the fibre. Without the final dehydration process, you will have a delicious date syrup that is great for flavouring yoghurt, shakes, custards and as a liquid sugar substitute available for cakes, muffins or as a drizzle for pancakes, waffles and I cream. Date syrup is available to buy and is a good substitute for honey, maple syrup or golden syrup. It’s also good for vegan diets. Hope that helps and thank you for watching.;-))

      You are most welcome M Z. Stored in an airtight container it will stay fresh to eat for up to a year. I’ve not made jam with and because jam requires prolonged cooking, I think it will burn or become bitter before the jam is set. I have a lovely date paste recipe on this channel which is tasty, full of fibre and nutritious. It makes a lovely date jam and imparts a lovely flavour to many desserts, bakery items and even curries. I hope that helps and thanks for watching.;-))

    At the end you said it wouldnt dissolve into coffee or tea but I'm curious what would happen if you added it anyway? My dad likes his coffee sweet but this could be a healthy alternative to his sugary coffee. Thank you for the tutorial :)

      Thank you for your question Samantha, it will release its sweetness into the hot liquid and flavour it, the fibre and I dissolved residue with fall to the bottom and make a caramel like soft ‘sludge’ in the bottom. Sounds gross I know but you can scoop it out and eat it with a spoon and it’s divine. It’s like a soft gooey sticky date pudding sauce, hope that helps. I think your Sweet tooth Dad would enjoy it immensely. Hope that helps and thanks for watching.;-))

      Thanks for the question, I do but that is because I love the rich caramel like flavour it imparts. You could cut it back a little if you don’t have a very sweet tooth but there are lots of health benefits gained from eating dates thank you for watching.;-))

    At suggested temperature, mine burned after 45 minutes. Another video suggests 200F for 10 hours over night. I think i'll try that.

      I am very sorry to hear that James, 200F overnight is a very long time, I would definitely check it often. Sometimes, size and moisture content of dates vary, I wonder if that had a bearing on the result. I hope your different recipe worked out better for you. Thanks for watching.

      I have never used fresh dates Ridhima Singhal, I’m sorry I have no idea if they would be suitable to use. Here in Australia I can only buy Medjool or regular dried dates, which are much more economical to buy and more suitable for this recipe because they have a lower moisture content.       Thank you for your enquiry Renee, you could use a dehydrator but you will need to make sure the dates are hard, dry and crispy before blending otherwise you will end up with version of sticky date paste. It will take a very long time, depending on your model and date quantity it could potentially take a couple of days. I hope that helps and thank you for watching.;-))

    I stay in India and I bought a kilogram (2 pounds) of Persian Dates for $3 (American Dollar) / $4 (Australian Dollar) . I am going to buy 4 kilograms now and try to make a paste from the fresh dates .

You may have to make a few batches or else use many trays to expose the dates to as much air as possible to ensure they dry sufficiently.       I’m a cool dry climate, stored in an airtight container this will remain safe to eat for 6-12 months. I’ve not tested it longer than that, I usually just have another batch waiting to be used. Hope that helps and thanks for watching.;-))

    I want to add this to my homemade elderberry syrup. Do you think it will dissolve or should I sift it?

      Thanks for your enquiry Jennifer, dates are very high in fibre, although they have been roasted and crushed to a very fine powder, the fibre will still remain. I fear you syrup may become cloudy and have a soft sediment in the bottom. This is harmless yet nutritious adding sweetness at the same time. If you don’t mind stirring or shaking up before using and are not worried about the clarity of you syrup, our date sugar recipe will add an almost caramel type note to your syrup along with sweetness.       You can make date syrup that will mix easier in your elderberry syrup. Just allow the dates to soak in filtered water in the fridge until they break down. Usually takes several days to achieve this depending on the dates. The liquid will get thicker the longer you leave the dates to break down. You can then strain the liquid and use as is or reduce over the stove for an even thicker syrup texture. If you don't want to prep that far in advance, there is a "quicker" method shown in this video: ruclips.net/video/dRvHJ4o28vM/видео.html

    Just one doubt . If one doesn't have an oven, could one air-dry the dates for 3-4 days , within the house ? I've heard that drying in direct sunlight tends to leach overall nutrient content. True?

      Thank you for your lovely feedback Lalitha, hope you find this recipe useful in your kitchen too. To be honest I am unable to air dry dates in the sub tropical climate I live in. They would go mouldy and spoil if I tried to leave the air to dehydrate them,, often our humidity level exceeds 80% . As for nutrient value being diminished I am unable to comment as I have never done it, nor do I have the scientific facilities at my disposal to test it.       Thank you for your enquiry, I haven’t tried it with raisins but I don’t see why not. They have to be really dry like hard plastic before blending and don’t do it too quickly because the friction of the blades will heat and melt the sugar in the dried 🍇 fruit, making it sticky and not a dust.       I’m sorry Charles, having never substituted fruit in this recipe, I’m honestly not sure. My advice would be to proceed with this recipe exactly as it is but to use raisins instead, keeping and eye on it to ensure they didn’t burn or not dry out enough. Low, slow and for a long time, should provide a crushable blender ready component to blitz. Hope this helps and thanks for watching ;-))

      Yes it is, there will be a little sludge in the bottom after drinking but it tastes like caramel and is safe & nice to eat with a spoon. Dates are full of insoluble fibre and this method doesn’t destroy the fibre content. Hope that helps and thanks for watching.

      If you imagine eating sweet dates, now imagine eating them once the moisture has been removed, the sweetness is concentrated as the only thing taken away is water. The result is a fine caramel type powder with lots of nutritional benefits and a lovely taste. It is very sweet, you cannot eat it near by the spoonful but it is delicious in coffee, baking and on desserts. Hope that helps and thanks for watching.;-))

      Thank you for your question, prunes and raisins have a much higher water content than dates and would take significantly longer to dehydrate, prior to crushing. Having said that, I have never tried this with anything but dates, so unfortunately I am unable to help you any further regarding this suggestion. We do have quite a few recipes using prunes and dried fruits in our channel if you have an abundance of them and are looking for new and interesting ways to use them.       What an excellent question Victor, to be honest, I have no idea. Treating the raisins the same way as the dates until they are crispy dry should actually work. You would probably need a greater quantity as the raisins have a higher moisture content and less fibre than dates. Of course the nutritional value would be different as dates are quite high in many minerals. It’s certainly worth a try though. Thanks for watching and posing such an interesting question.;-))

      I do put it on coffee, the flavour enhances the coffee and the best bit is the gooey, caramelly, sticky “sludge” left in the bottom that is spoon worthy for that lasting sweet after flavour.

    How to identify whether dates are sweetened or they're pure ??

      I have no idea. Dates are so naturally sweet, I can’t imagine why they would need to be sweetened. I love Medjool Dates , they are soft plump, almost juicy and perfect for eating just as they are and I use the very cheap style, about 1/4 the price of medjool dates, they are tiny, very dry, already pitted and much darker in colour. The skin is flaky and separates easily from the flesh. These are the dates I use for this recipe because they are so much more dehydrated and much more economical to use. As for sweetened dates, I don’t believe the dates I buy in Australia have had sugar or sweetener added to them. The two distinctly different varieties have completely different moisture contents, if you remove the moisture then you intensify the flavour and naturally present sugars, probably going a more concentrated flavour.       Thank you for that information Kajal Matlani, I have never seen dates sold here in Australia with a shiny glazed appearance, I wonder if they a are different variety again that is not available here. Obviously I haven’t seen every store selling dates here but your dates sound like they would be really delicious to eat with a nut and cheese platter . I’ll have to keep my eye out for them.     I didn't want to burn the dates so I put it on low heat, 80C for 4hours and they got crispy but not so dark as yours, however after I blend it in the coffee grinder, it clumped up so badly the whole thing is in one piece, can it still have moisture after 4 hours @ 80C ? they felt very hard before grinding, almost caramel like.

      +OZSA87 thank you for your enquiry, I think your coffee grinder may have melted the sugar in the dates and turned them into a toffee. Friction from a fast spinning blade can generate a great deal of heat. Perhaps blending at a lesser speed, if possible, allowing machine to cool between batches and definitely blending smaller batches should solve your problem. It's hard to know if there was any moisture remaining as I don't know the moisture content of the original dates and how efficient your oven is at removing that moisture. Mine sound like glass when dropped into a bowl after drying. I also blend them when they are completely cold, I hope these tips help you achieve a nice fine powdered date sugar and thank you for your enquiry and for watching.;-))

      thanks for replying, I just checked a day later, it's even harder than before, it's basically one big block of date sugar, can only chew it now :)) next time I will try to grind it very slowly, I did notice in the end that the more I grind the more they stick together but it was too late. by the way, yours almost look black, mine is pretty much brown and still I felt a bit of burnt taste, how does your sugar not taste burnt ? also one thing, when I took the dates out of the oven, they were quite sticky (just like before the oven), are yours sticking as well ? Some of the endings became a little bit caramelized.

      +OZSA87 thanks for the feedback, no mine are really hard and not sticky at all. They have a deep rich almost caramel taste, if you can imagine a very concentrated date flavour, that is pretty close. Really all you are doing is removing all of the moisture and then grinding it so it's not really cooking, just removing the moisture content that dilutes the concentrated date taste. It doesn’t dissolve but if you stir it into coffee it will sweeten it and my favourite is the last mouthful, when the date sugar rehydrates in the hot coffee and leaves a thick caramel coffee tasting residue in the bottom of the cup.       Absolutely , medjool dates are much more expensive, have a greater moisture content(requiring more dehydrating) are generally much larger , which means smaller dates have a greater surface area exposing more of that area to the drying heat required to prepare them for grinding or crushing.       Thank you for your question Miriam, I know cane sugar gets a very bitter taste if it is overheated or cooked for too long. It is possible that your Date sugar may have experienced the same problem. Ours were just a bit darker in colour than the uncooked state and sounded like broken hard plastic or even broken glass when dropped into a plate before grinding, I wonder if your blender cooked it a bit longer through the friction action of the blades, no added heat just a very fast or powerful blender can generate quite a bit of heat when pulverising food to a powder. Your date sugar should look a bit like dark brown or Demerara sugar and have sweet almost caramel taste. When stirred into coffee there should be a sweet syrupy delicious sludge left in the bottom as the fibres in the dates rehydrate in the hot beverage. Great to eat with a spoon at the end. I’m sorry you experienced difficulties with this recipe. Thank you for the feedback and for watching.;-))
