    謝謝老師,很多細節真是獲益良多
    是否放料酒,還是要看口味,例如竹筍雞起鍋前加些米酒,風味不錯;腥味和鮮味來源是一樣的,去腥太過,雞肉就沒味道了,總是要適度才好,我個人使用焯水,但是用冷水入鍋小火加熱,除了去血水效果好,雞肉解凍很慢,若解凍不完整,小火加熱也能順便解凍,直到雞肉微泛白,就可以撈出洗淨,就像前面說的,去腥太過也不太好

    用盐清洗鸡块2分钟,搅拌均匀姜白醋浸泡20分钟,香菇加白糖温水50度泡发,大葱斜切生姜片。捞出几块冲洗。猪油炖鸡。略炒肉质收紧,加开水烧开2分钟捞出葱姜,转用砂锅炖。一小时
    三放:红枣、干香菇、枸杞
    三不放:料酒
    三不放:花椒粒八角

    認同燉雞湯不可以用料酒,否則雞湯會有酸味 。

    从来没有见过别人炖鸡汤放花椒或八角,视频主干脆建议别人三放十八不放,把想到的香料通通列入不放的行列。
    还有鸡汤本身鸡皮就带油脂,还拿猪油去炒过,原本清汤给你搞成油汤,佩服佩服。
