They are wonderful fish to eat if ur able to eat them fresh and before they are salted down. Sadly they are salted down very soon after they are unloaded off of the boats because they begin to rot very quickly. If only they could be preserved in tins like sardines and enjoyed naturally. What a treat that would be.

If all they have to do is shine a light on a moonless night, to catch them anchovys they will most likely be extinced in a few years, That's why Euro parliment put quaoters makes sense.

Now to make it matters worse CI and CE are pronounced as “CH” (Ciao = chow, cello = chello, Montepulciano = Mon-tay-pull-chee-ahno, cent'anni = chent-ahnee), but SCH is SK. Hence, “bruschetta” is pronounced “broo-sketta”. Don't believe me? Go to Italy and order “broo-shetta”. Peas and Lovage : )

The Ce in Cetara is pronounced the same as in cedere (to yield ). I can assure you that it is pronounced with the ce as in cheque by everybody from that region - I’d assume the rest of Italy too.

It was my mistake for assuming what I was hearing was mispronounced, rather than looking at a map of the Amalfi coast and taking note of the spelling. The Mediterranean sea has the highest quality seafood. Here in Greece we love them too and we cook them in the same way.
