When cooking in the fireplace, move the fire to one side and then take a little of it for under the "3 legged" pot holder. That way you control how hot the pot will be. I use MCT oil, it's liquid coconut oil. It doesn't go rancid/bad on my cast-iron pans after cleaning. That first tree is BIG! Which = alot of firewood! If you cut the vines off at the ground level the rest will die. So many hidden secrets to uncover. Thanks for sharing. God bless and protect.

The cauldron with the rounded ‘belly’ is very old. The handles are called ‘ears’ with the top part horizontal from the cauldron. If you look at the underside of the cauldron, there might be a long slightly raised line, called a ‘gate mark’ where the cauldron came out of its mold when made. The iron tripod that sits near the cauldron is called a ‘spider’, used to sit the cauldron on when it’s sitting over a fire. Perhaps you already knew all of this 😊. The key to cooking in cast iron is making sure it’s been seasoned properly, then cooking over coals, not flame. You can even add hot coals onto the lid. You can even bake bread in the Dutch oven pot.

@lizdavies264 when fire burns down and you have embers (coals) that is when you can use foil wrapped around your meat or potatoes and cook. I use a cake pan cover bottom with bacon, chop potatoes and onions and put pork chops on top covered well with foil all around so not to have to scrub black off my pan. My son use to say "when will it be done" I'd always say you'll know by the smell. It smells so lovely cooking.
I wrote a list of things to accomplish on our 8 acre, two story, 4 bedroom home, then listed the date each thing was finished. One acre at a time, one room at a time. 1975 - 1991. We tore down a barn, house, 8 out buildings! We recycled all barnwood, beams, lumber, architectural ornamentation. That included planting trees, flowers, shrubs, etc and an addition. But as has been mentioned, you cannot cook directly on copper - poison - it must be lined and there are many artisans who will do this. Thse pots she purchased are purely decorative, for plants likely.

The cooking pots do not need to be in the fire, you need to shovel the hot coals forward and place the pot on them. You only suspend things over the fire that you wish to boil. I notice you have a trivet, that was again stood on hot embers so you could put a pan on top to cook eg: a frying pan to make fried eggs. You can even bake in a cauldron provided it has a flat lid. Place cauldron over hot coals, in the bottom place a copper dish inverted. Stand your pie on the copper dish, put lid on cauldron and cover lid with hot coals. You need a lid lifter (a long handled iron (looks like a fork with one pron bent back towards the hand), a pie takes about an hour to bake.
I said this on the convent video about the kitchen fire. One big fire in the middle, small piles of hot ash and charcoal in smaller piles under the cauldron legs so you could cook several dishes at once with one fire :)

Wow, those cauldrons were a great bargain, even in need of a clean and re-seasoning. They would have sold for at least $50 each in the US. The curved one is for soups and stews, the straight one is for bread. And they are very old since they have legs, definitely made for cooking on a fire. I'm already in love with Pannard. I've been researching moving to France for retirement and to get away from the madness here. Perhaps a cottage, or apartment. I need to relearn the French the nuns tried to pound into my head when I was a small child.

I love that you’re going to learn about cooking over an open fire. But also getting a small wood cooker in there and making your little kitchen downstairs is really cool. You can throw in your protein of choice, veg, herbs and garlic….with a bottle of wine over the fire when you get to the chateau and when you all need a well deserved break a few hours later dig into a hearty meal 😋 🤤 ❤❤❤ Sadie just put the ring stand over the coals until you get a hook set up…no need for crispy unless its bread 😂. Seeing the two huge trees down from the storm made me flash back to Hurricanes Helene and Milton when they hit Florida. Between our yard and my mother's yard an hour away, we had 3 large trees down and countless branches. No damage to our homes, though, thank God!

What fun discoveries to be found in this old relic...lots of firewood with incoming tempests, I live in hurricane country, never run out of wood and when the power is out, cooking in cast iron over a flame is a yummy solution... and just look at those clean windows, that's becoming a cozy room with all the candles...and wine...CHEERS!
Stan, once you sandblast the pots, you apply thin coats of oil or animal fat, wipe off excess, then put in the fire to bake into the cast iron. Repeat the oiling and burning in the fire three times and they will be perfect for cooking. I like to fry bacon the first time cooking in them, they will become non stick after a few times. Only clean with water, never dish soap. If something sticks in the beginning, put water in the pot, place over fire, and the hot water will release the residue.
I remember my Grandmother talking about cooking with copper. This is what I found: Safety Copper is a micronutrient, but cooking with copper can be hazardous if you cook or hold food for too long. The FDA recommends avoiding copper for foods with a pH below 6.0. They should look over trees there may be viable oak boards(ie impossible to purchase oak planks) any thing from oak can be used to make and repair items in the manor. Also billy has out of this world carpenter who makes these things
The cast iron cauldrons or dutch ovens can be used to bake bread in. You get one quite hot, put in some corn meal or other coarse meal, and gently put your risen bread dough in. Put the lid on and clear a spot in the embers of the fire to set the pot so that it stays at baking temperature. Looking forward to your videos on exploring the hidden spaces. And it occurred to me a couple of days ago that between the convent and Chateau de Pannard, Yannis could be working for a decade or more and likely training apprentices of his own.

You probably know this but just in case... it's very important to only burn seasoned wood, green wood is far too resinous for the chimney, building up residue inside and more likely to cause a chimney fire ... stay safe !!
Add a lid to that pot and you would have what we call a Dutch Oven...back in the days they were originaly made of cast iron and ment to hang from a hook in a fireplace or tripod over an open fire.. sometimes directly in the coals with more on top to bake with it..

Wow, those cauldrons were a great bargain, even in need of a clean and re-seasoning. They would have sold for at least $50 each in the US. The curved one is for soups and stews, the straight one is for bread. And they are very old since they have legs, definitely made for cooking on a fire. I'm already in love with Pannard. I've been researching moving to France for retirement and to get away from the madness here. Perhaps a cottage, or apartment. I need to relearn the French the nuns tried to pound into my head when I was a small child.

What adventures! This is living history. It took so many qualified and devoted employees to run a chateau. You two make the best couple; you complement one another so well. The small goals list is the best; one achievable steps one at a time keeps everything from overwhelming everyone.
I love that you’re going to learn about cooking over an open fire. But also getting a small wood cooker in there and making your little kitchen downstairs is really cool. I love that you’re using it while you’re cleaning up. I’m excited to see your progress and all the things that you’re doing. I wish your videos were longer. I know Stan is working many jobs so it’s hard but I am so happy that you’re saving this mansion. I remember Billy and Ryan looking on the outside of this a while back. The giant trees that fell down that wood could be a great asset to be milled. Escaped to rule France. Dan has milled a bunch of the trees from his property to use in rebuilding his château.

Loving all of it! ❤ Same different….it matters not there is always something of interest. The cast iron pots are super. The straight side one would be great for bread and the other a stew. You can throw in your protein of choice, veg, herbs and garlic….with a bottle of wine over the fire when you get to the chateau and when you all need a well deserved break a few hours later dig into a hearty meal 😋 🤤 ❤❤❤ Sadie just put the ring stand over the coals until you get a hook set up…no need for crispy unless its bread 😂. Thanks for the generous sharing.
Seeing the two huge trees down from the storm made me flash back to Hurricanes Helene and Milton when they hit Florida. Between our yard and my mother's yard an hour away, we had 3 large trees down and countless branches. No damage to our homes, though, thank God!

I love the cleaning out videos-finding all the little treasures the Mucky Mansion has to reveal. Stan’s enthusiasm and jokes are great. Sadie’s laughing or chuckling at Stan is great. What fun discoveries to be found in this old relic...lots of firewood with incoming tempests, I live in hurricane country, never run out of wood and when the power is out, cooking in cast iron over a flame is a yummy solution... and just look at those clean windows, that's becoming a cozy room with all the candles...and wine...CHEERS!
Stan, once you sandblast the pots, you apply thin coats of oil or animal fat, wipe off excess, then put in the fire to bake into the cast iron. Repeat the oiling and burning in the fire three times and they will be perfect for cooking. I like to fry bacon the first time cooking in them, they will become non stick after a few times. Only clean with water, never dish soap. If something sticks in the beginning, put water in the pot, place over fire, and the hot water will release the residue.
I enjoyed the video very much.Stan always gives us some giggles. A lot of things to uncover makes this a mystery as well. See you both tomorrow.

Lining
Most copper cookware is lined to prevent copper from reacting with food. Tin is a traditional lining material that is inert and nonstick. Stainless steel is another option.
Utensils
Use soft cooking utensils made from silicon or wood to prevent scratching the lining.
Heat ratings
Read the specifications for your copper cookware to ensure you don't exceed its heat ratings.

Wow those are massive trees that fell over. I wonder if anyone could mill some of that into lumber that you could then use in the building or make something with it. Seems a shame to just burn that wood. Looking forward to seeing what you cook with your new pots.
A great many of the chateau owners are very aware of the work involved in renovating and bringing back their buildings from the brink of destruction. Each has a dream and a desire to do their very best. There are a number playing on youtube now and they are all rather marvellous.

They should look over trees there may be viable oak boards(ie impossible to purchase oak planks) any thing from oak can be used to make and repair items in the manor. Also billy has out of this world carpenter who makes these things
The cast iron cauldrons or dutch ovens can be used to bake bread in. You get one quite hot, put in some corn meal or other coarse meal, and gently put your risen bread dough in. Put the lid on and clear a spot in the embers of the fire to set the pot so that it stays at baking temperature.
Looking forward to your videos on exploring the hidden spaces. And it occurred to me a couple of days ago that between the convent and Chateau de Pannard, Yannis could be working for a decade or more and likely training apprentices of his own.

You probably know this but just in case... it's very important to only burn seasoned wood, green wood is far too resinous for the chimney, building up residue inside and more likely to cause a chimney fire ... stay safe !!

Add a lid to that pot and you would have what we call a Dutch Oven...back in the days they were originaly made of cast iron and ment to hang from a hook in a fireplace or tripod over an open fire.. sometimes directly in the coals with more on top to bake with it..
