    Really good points, and I appreciate how you differentiated between a water pan that’s boiling than one that’s merely helping with humidity and letting off just a little steam. Some bbq experts are big on water pans but a lot have noticed how they hamper bark formation. Actually I find it can slow and help preserve the bark, like in a Weber Smokey Mt. Another issue is how they affect the smoke flavor, though. I know that the Slow n Sear folks have tried to sell folks on how that the added moisture makes for better smoke adsorption but experience and other experts have noticed something different. Anyone whose cooked with a Weber Smokey Mt much with both water and dry pans has probably noticed how they can get away with more wood if using water. I remember Ray Lampe (Dr. BBQ) saying in a online discussion years ago how that the steam “washes the smoke” so it’s not as strong a smoke flavor. Something else regarding smoke flavor, the main thing I want from a pan in my Kamado Joe is for it to keep my drippings from burning and smoking.

      Hey David, I like to use my SnS. I think some water up front on a cook is good. Also, sometimes I won't use water and just spritz... depends how I am feeling.

      I'm not really one of those environment activists, but using disposable ones when you can easily use a reusable one is just madness. Costs more longterm, lots of energy goes into making them and they do suck for the environment.

    Nice run through Johnny. I recently ran into a situation where I had no space for a waterpan so just had to spritz ever so often. But love the sns because it keeps a very moist environment!

    I thought you were going to bring up the stall effect on meat as well. But yes sir, I agree 100% . I learned all of this through trial and error which was still very fun but not all in one place and time. Thank you for helping to keep things simple for our new folks coming in.

    Greetings! I have been binging on your videos for the past few days. I am brand new to grilling and was on the fence about what kettle grill and accessories to buy but am now anxiously awaiting my Weber Performer, the SnS basket and SS spinning grate, Vortex, ThermoWorks Smoke probe, and of course a spatula, fork, tongs, and brush. Now I’m wondering about getting the SnS Drip n Roast….Thank you for sharing your knowledge and I look forward to putting it all into practice once my set up arrives!

      Sounds great! Sounds like you are going to be completely set up! Please do not lose patience when you start grilling. You will make mistakes, just learn from them. I have been grilling since I was a kid along side my father... I am still learning today. Good luck and let me know if you have questions.

    I’m going to make my own drip plan from a 48” paella dish! I’m going to slice off a section, bend over to create a 1 1/2 “ lip then weld up the corners. I bought the dish on eBay for £12 🇬🇧 about $14.
    If you can do it, DO IT! saved a lot of money.
    I am an aerospace fabricator and specialise in welding so I guess I’ve a head start. Love your content.

    Hello, I purchased the Drip 'N Griddle Pan - Deluxe from SNS Grills, Price is $89.99 Not very happy with it. I also Purchase the Drip 'N Roast Pan - Porcelain and I love it. The price is $44.99 but I paid $39.00. SNS Grills just came out with the Drip 'N Griddle Pan - XL for the 26 inches Weber Price is $119.99 I am going to what when it goes on sale. I also have the Slow ‘N Sear® Deluxe and the Slow ‘N Sear® XL for my 26 inch Weber. I live in CA and I Purchase everything on their website and do not pay Taxes. I forgot I even have the SnS Carbon Steel Flat Top Plancha for my 22inch weber. Great video keep up the great job.

    One significant matter that bugs me about so many that use "disposable" aluminum is WAST. Aluminum does not grow back. I believe in conservation. Use reusable item! At least those all could, would, should ReCycle! Not in the trash! Yes, SnS has a drip pan and cost more than an aluminum pan but can be used hundreds or more time. I purchased an SnS and a 18.5 inch round like a bake pan as a drip pan. I'm just getting into BBQing and trying to do it as right as I can. I did achieve a culinary degree from a very reputable College. But one never or I can always keep learning.

      I agree. I like to reuse items. Which is why you see me use towels over paper towels. I am a hypocrite at times.. using a tin pan… and then wrapping it in foil.
