    I was pondering for such a long time whether I should buy Tapioca Maltodextrin powder or not. It’s not that readily available, and it comes in a big bucket, so I wanted to make sure that there are a lot of applications to it in the kitchen. Finally, I’ve decided to purchase it. And, I’m very happy that I did!
    In this video I will share with you, guys,101 basic info on this Molecular Cuisine ingredient. I will explain what Tapioca Maltodextrin is, how it functions and interacts with fats, how it is different from natural starches and how you can use it in cooking.

    FYI, Tapioca Maltodextrin powder is also often referred to as N-Zorbit M, by some manufactures. It is possible, however that the proportions would not be exactly the same... I cannot test it for you, I do not have N-Zorbit M right now.
    There’re also more applications to Tapioca Maltodextrin in molecular cuisine, than just making powders from high in fat products. And, I will me making a video on that very shortly, so make sure to subscribe. Thanks!
