    welcome to this what I eat in a week in my cabin! Theres a bunch of "anti-anxiety" meals in this one, and what I mean by that is, simple nourishing meals that won't add extra stress to your already busy life! I hope you enjoy and if you try any of these recipes let me know down in the comments or over on instagram!
    Note: I am in no way saying any of these meals will heal, treat or cure your anxiety!!! Every one is different and the way I fuel my body might not be how your body feels the most nourished. This is not intend to be copied, but to simply inspire and entertain.

    Potato soup recipe:
    • 1 cup cashews (soaked in hot water for at least 15 min )
    • 4 yellow potatoes
    • 1/2 cooking onion
    • 1 large rib of celery
    • 1 cup fresh dill ( loosely packed )
    • 1 cup frozen peas
    • 2 tbsp soup stock
    • 1 tbsp chilli oil ( optional )
    • salt to taste
    Dice potatoes, onion and celery. Add all those things to a pot along with 6-8 cups of water and soup stock. Cover with a lid and let simmer for 15-18 min ( approximately )
    In the mean time blend your soaked cashews. Don’t add to much water in the blending process as we want the cashews to form a smooth paste and not be grainy. So only add water as needed!
    Roughly chop your dill small enough that it won’t be stringy in the soup.
    Once the potatoes are cooked 3/4 of the way, add the dill, frozen peas, cashew cream and chilli oil. Cook the rest of the way and enjoy✨🥔🥰

    Simple yellow Thai curry:
    • 1/2 cooking onion
    • 1 large carrot
    • 1 rib celery
    • 2 yellow potatoes
    • 3-4 cloves garlic
    • 1/2” fresh ginger
    • 1 large handful green beans
    • 2 tbsp yellow Thai curry paste ( watch out for ones with fish sauce )
    • 1/2 very small red Thai chilli ( dried ) ( optional )
    • 1/2 block extra firm tofu
    • 1 can full fat coconut milk ( I used lite because it’s what I had )
    • 1 tbsp natural oil
    • Salt to taste
    • slice onion into strips, slice carrot, dice celery and potatoes
    • in a large pot over medium - high heat add onion, carrot and celery. Add a pinch of salt. Cook until things have a slight brown. 4-6 min. Reduce heat
    • add minced garlic and ginger along with potato. Allow to get fragrant ( about 1 min ) before adding coconut milk, curry paste, lemon grass and chilli. Mix really well and allow to simmer until carrots and potato are 75% cooked ( we don’t want to veg to be soggy though so keep this in mind! )
    • add green beans ( cut into bite size pieces ) and cubed tofu. Finish cooking and enjoy! 👩🏻‍🍳😚🤌🏻✨

    Everybody needs to listen to Julia and put chocolate in their oats! I already had some mini chocolate chips in my pantry so I tried it this morning with snickerdoodle protien powder and toasted nuts. It was a gamechanger!!!

    Your lifestyle is straight up what I dream to one day achieve! A gorgeous little cabin/house in a wooded/forested area, peace, tranquility, a lil pupper of my own, and tons of homey, delicious veggie filled meals! Only thing missing is a wonderful partner to enjoy it with, and one day children to raise in such a beautiful environment! :)

    I don’t mean to sound preachy but DO NOT EAT potatoes that were cooked and left out all night! You are risk of botulism! I learned this very important lesson years ago when I made the same mistake. Another wonderful video though girl!

      for food safety: no food should be left out on the counter (or in the oven) more than 2 hours anyway… always put it in the fridge!
