- Aloo Tikki, NOT deep fried, NOT Shallow fried!! New way to make crisp aloo tikki using very little oil!

Ingredients: (If making both the stuffings, then double the quantity of potato mix, the outer crust)
For outer crust:
Boiled and cold potatoes 500 gm
Rice flour 3 tbsp/as required
Kasoori methi 1 tbsp
Oil for cooking
For stuffing no. 1
Chana dal 1/2 cup
Salt 1/3 tsp
Turmeric powder 1/3 tsp
Green peas 2 tbsp
Oil 2 tsp
Jeera/whole cumin 1 tsp
Green chili paste 1 tsp
Coriander powder 1 tsp
Garam masala 1/3 tsp
Salt as per taste
Red chili powder, as per taste
Amchoor, 1/3 tsp or as per taste
Sounth/dry ginger powder 1/2 tsp
Green coriander leaves
Stuffing no. 2
Sprouted moong dal 1/2 cup
Paneer 100 gm
Green coriander leaves
Salt 1/2 tsp
Red chili powder 3/4 tsp
Coriander powder 1tsp
Amchoor 1/3 tsp
Garam masala 1/3 tsp
Sounth/dry ginger powder 1/2 tsp
Chopped dry fruits 2 tsp
To serve
Khatti-meethi chuthey
Green chutney
Whipped yogurt/dahi
Salt
Chaat Masala
Red chili powder
Roasted Cumin powder

You will see mostly non-stick pans if you search for appam pan. I now use a cast iron pan, more durable and better results! Search for ebelskiver pans. They are the same, just don't have a lid. You will always have a lid in your kitchen that will fit well! Be mindful of the size of moulds in the pan. You won't want to buy something with tiny moulds

Poonamji, I’m still waiting for your video on making sprouts. Can you please share a method that works? I barely get sprouts and if I keep longer it gets slimy 😞
If u didnt got the process for sprouting
Eg soak moong dal in water
Keep it overnight
First wash mong sabut dal
Then drain it's water
Transfer it in any container
Keep it in dark hot place like micro wave .micro wave should be switched off
It will get sprouts in a day
Then wash it properly
Now steam it in cooker
Add little water

Mam I live in Australia, well how do u make soft paneer bec we get cows pasteurised milk here What do u use in place of white butter. Like to make chakli back home we use malai or white butter. Thxs

You can make white butter from store bought whipping cream. That's the closest!
A few years back, I made the effort for several months to source un-homogenized milk so that I could get malai and make butter out of it. Unfortunately, since it was from cow's milk, it was no where close to white butter back home. Finally, I dropped that idea!

I am not really sure if they can get the same in Canada, but I am sure they will find something similar. many options online. Ask them to look online for ebelskiver pan cast iron. (You will see mostly non-stick pans if you search for appam pan) They are the same, just don't have a lid. You will always have a lid in your kitchen that will fit well! Be mindful of the size of moulds in the pan. You won't want to buy something with tiny moulds

Vandana, I make kadhi pakora, lauki kofta, malai kofta, ram laddoo, urad and moong dal vadas, tikkis in appam pan. One could also make a ton of other things.I hava already shared recipe for kadhi, lauki kofta and ram laddoo. Let me know if need the video links
