  • Smoked chuck roast is easy to cook, requires minimal ingredients, and, when done right, tastes similar to brisket.
    Sometimes called the poor man’s brisket. It is affordable if you want that brisket taste but don’t want to shell out for a whole brisket.

    Thanks for this! I did one yesterday. $16 for the chuck vs $32 for the same weight brisket. The fat rendered perfectly and I liked it just as much if not more than a brisket!

    I do this all the time, but shredded at the end. It's cheaper and less hassle than a brisket and nearly as good.

    in my local grocery, chuck used to be like $4/lb, now brisket is $8 and chuck is $10

      @@kakusei3672 got the chuck recently, smoked 1, froze 1. yummy. They had prime brisket flats, got it, smoked it, seemed to behave well during the smoke, but in the end was a little tough.

    Just smoked my first chuck roast this morning at 9am. 250 for 4 hours. Temp was fluctuating after the 2 hour mark. I wrapped it at 170 around 1pm and I’m already 2 hours in at internal temp at 185 with ambient 300. All I know this wasn’t 4-5 hour lol I still have to let it rest for at least 30min to an hour after hiting 203 internal.

    13lb smoked brisket yeilds about 6 lbs after trim and cook. Chuck is much cheaper at that point.

      I just smoked a prime whole brisket from Sam's. It was 17 lbs raw and produced 6.5 lbs of edible meat. That's $13/lb final. I actually prefer Chuck roast smoked and it comes out cheaper.

      Same the first two times for me, what i did was cook low as i could which ended up being 175-190. It stalled after 3 hours at about 139. Then i upped the temp and cooked it as normal. Pretty annoying tbh but worth it for me.

      Per pound yes. But it’s smaller cuts. For example the smallest brisket I seen at Sam’s the other day was 16lbs and was like 70 bucks. I got 2 Chuck roasts for like 18 bucks. Just threw one on the smoker

    How long does it take that cut to reach 175F cooking @ 250F?

      Probably 6 or 7 hours, but 175 isn’t done, that’s just the point he wraps it at, then you put it back in until it’s done at 200F

      Depends on what temp you're also starting at. If you are literally putting in the roast out of a fridge, it'll take perhaps 6-7 hours at 250. But if it's sitting at room temp or close to it, I'd say about 4-5.

    For me in Florida, chuck roast is now unfortunately more expensive per lb than brisket. Prime brisket is running 5$ a lb in trimmed. Choice chuck roast is running 6$ and prime 8-9$. I smoked one today and it was amazing. But more expensive

      It means that when you put the probe(meat thermometer) in it slides without resistance in as if into butter, ie. probe tender😁

      This might be a late response but hey here goes: totally different cuts that should be prepared completely differently. Chuck in my opinion should always be served as a well cooked meat as it is full of connective tissue and tough as a steak without breaking this tissue down. This is why it is smoked, braised, or roasted into a pot roast at 205°+. This is yummy, but a tri tip on the other hand should NEVER been cooked well done as it is a perfect roast to cook to medium rare (130°-135°) ot medium (136°-140°). So, the question is, do you want BBQ or braised food, or do you want a steak? My money is usually on tri tip for everyday cooking, and chuck when I want to smoke something smaller and easier than a brisket or pork butt. Also I'm Californian. I know my tri tip, but have learned all my BBQ skills from Texan techniques. Happy eating!

      As a Californian tri tip ALL DAY but they are too different cuts that get cooked way differently chuck is low and slow where tri tip is hot and fast I cook tri tip at least 2x a week I do mine at 450° indirect fat side up for 20mins flip and cook till 130° internal keep the rub simple salt pepper granulated garlic and dried parsley

      @@George-zf3sb Not sure how you smoked yours, but I basically do the same as he’s done here, I do spritz it every 20 minutes or so with a combination of beef broth and Worcestershire, but everything else is the same, mine always come out juicy and very tender, with the same flavor as a brisket. If you pick one with to much lean, you will have some dryness, I always choose carefully.

    Tried this, and it did turn out well. However, I felt the cook time was alittle off to really get brisket tender. It was tender, just not brisket tender. But it was great!

      You lose almost a half the weight of a brisket through trimming and cooking, chuck is pre trimmed with way less weight loss

      Depends, but get the bark nice and kick the heat up to 350 until it hits 200 . It's way easier that all these videos. It too me too long for 3 pounds. I wrapped it at 170 and only went to 225,took forever. After you wrap it you can go to 350 degrees in your oven. ( waste of pellets if you don't imo ) it's not a brisket or a prime rib, so get the internal temp to shred.

      @@buzzardscry1383 low and slow, smoke at 200 until internal temp is 150, wrap it and bump it to 250 until internal temp is 202. Using a more substantial binder than oil helps, because it caramelizes and removes the need to spritz- simple yellow mustard is incredible, mayo works as well (skip the soy from the "vegetable oil" base and make it yourself, it takes literally 2 minutes and you'll never go back).
      It takes 6-10 hours depending on the size of the meat. A brisket can go 12-24 hours. But if you want to break down all the cartilage, intramuscular fat, and render all the tough bits into buttery goodness, it takes a very long time. And it is VERY worth it!
