For the Joustus cards that wouldn't make sense yet, I choose to speculate they are magical, fortune-telling objects. They predict the future, and they also hover over key moments from the past. They aren't Enchantress's creations; they are cosmic.
For the relics and curios part, I remembered the devs said that for shovel knight since both SoH and PoS happened at the same time, they wanted to emulated the player going back to explodatorium to fight plague knight with everything they got. But since you can't be in the position of spectre knight in king knight's campaign (I hope I worded this correctly to avoid confusion), it kinda suggest that curios are implemented to tell a timeline so theory do hold up in some way. The devs also said that for each campaign the main character's are the storyteller, they could add some lie to make themselves look cool. That's a good way to reach some conclusion to a timeline confusion, "maybe some things didn't actually happen". Both of these you can find on yacht club stream, I can't remember which one though sorry...
Regarding Sheild Knight, Luan and Donovan’s cards in Joustus, We see in a secret room in KoC that the Enchantress still holds fondness of her old life as she has her old helmet hung up on the wall. Luan and Donovan were probably made either in mockery of Specter Knight’s lost life or were requested by Specter Knight in remembrance of who he was.

This comment is a few days old but do you happen to have the dialogue where he says a two syllable word in Dig? I went looking for it and couldn’t find it. I did forget about the SoH boss rush defeat dialogue though, that’s a good catch.

While Treasure Knight’s wife story didn’t happen. Polar knight had a partner who did pass away according to one of his minions you talk to in Specter of Torment.
I think I found the dialogue you’re referring to? “Polar Knight has gone somber and stormy since his loss. Never has he shoveled snow with such vigor.” I think given the context that the rail rider will say this after you beat his stage in Specter of Torment that this is just referring to Polar Knight being salty over being defeated.
Honestly you’re not wrong for coming to that conclusion as I think the devs could have done a better job conveying that the dark acolyte and the troupple acolyte in King of Cards are the same person. The only hints in game is not seeing the dark acolyte in the final joustus house and the amiibo fairy of specter knight surrounding both characters. So maybe they could have done something like give that troupple acolyte a more unique design to set him apart from the other acolytes.
Locally yes, you’d be taking turns using the controller. Online is a little more tricky to set up. If you have the steam release of Treasure Trove / King of Cards you can use steam remote play to get the same effect as local play. Unfortunately you can’t do online multiplayer Joustus for the console releases to my knowledge.

My counter theory is that The Enchantress made her own edgy OC's of people in town, and then decided to make them real by corrupting them.
