With the meat salted before cooking and the sauce I think it would be a bit salty. What state are you in? You said veggies are limited. California Asian market has all kind of veggies. Overall the good looks yummy.

Surprisingly is it not too salty because only small slices of the meat is eaten with the sauce which is on the sour side due to the lime juice. Plus it is paired with the veggies which help cuts the saltiness another level. I am in Stockton, Ca and yes there is an abundance of veggies however I was comparing this version to the version that is used in Cambodia. Basically for those living outside of Cambodia to know that it is possible to make this dish without having all the types of veggies they see used in Cambodia 😊 Thanks for your comment.
