The river is very shallow where the sprints are held.

how important is finishing high in these seeding races? does it make a big difference for the race, or is it more for fun?

Your sprint time is used to place you on the starting line in the street. There are 5 canoes per row. When the gun goes off, the paddlers need to run from the street to the water with their canoes. So yes your sprint time in somewhat important.
