TAMARINDO FLAVORED RIM PASTE
1. SET YOUR FLAME AT A MEDIUM HEAT FLAME
2. OPEN 16 PULPARINDO'S { ONCE PAN IS HEATED UP ADD YOUR PULPARIONDOS ALL IN THE PAN }
3. WHILE YOU WAIT FOR THE PULPARIDOS TO START MELTING START OPENING UP 8 SMALL LUCAS
4. ADD 4 1/3 CUPS OF SUGAR IN WITH YOUR LUCAS POWDER
5. ONCE THE PULPARIDO IS SOFT { USE NON-STICK PAN } START SMASHING DOWN ALL OF THE PULPARIDO INSIDE THE PAN
6. ADD 4 -1/4 CUPS OF CHAMOY TO THE MELTED PULPARINDO. MIX THEM ALL WELL TOGETHER { UNTIL IT REACHES A LIQUIDY CONSTINTENCY }
7. ADD THE SUGAR WITH LUCAS TO IT AND MIX IT WELL
8. ADD 4- 1/4 CUPS OF TAJIN { MIX WELL }
TURN OFF THE STOVE AND MIX IT WELL. YOUR CHAMOY IS NOW READY. FILL YOUR 4 - 8oz CONTAINERS WITH YOUR RIM PASTE AND ENJOY!!!😋

Adding in more chamoy will make it more runny less thick
Do you wait for it to cool off before pouring in containers, and to close them ?
No I do not wait to pour it or to close the lids it's usually not very hot I work on medium heat

Yes I pour it in right after I make so sometimes it's a little hot. maybe your measurements are a little of ? I usually only fil to the line seen on the 8 oz Container

You can I would recommend just using more chamoy for a more liquefied consistency
So if ur only making one batch then u would use 4 pulparindo, 2 Lucas,only one 1/3 cup sugar ?one 1/4 cup chamoy? One 1/3 cup tajin?

I just made this and turned into a jelly instead of paste. I reheated it and added chamoy but now its a liquidy jelly
I notice when my rim paste is fully cooled it almost hardens a bit and I can’t dunk things in it without reheating it a bit. Is that normal, or should I be adding more Chamoy?
Try adding more chamoy and less sugar

Are you using powder sugar? And it will good outside of the fridge for you to 3 months?
Regular sugar not powder sugar and I honestly I had 1 for over 3 months in my pantry and it never went bad until I finished it

I'm sure you can but I don't know how the consistency of it would be.

When it sits it does get a bit thicker. If you want a thin or more liquidity add less sugar and more tajin

Sorry just notice I said less sugar and more tajin.. I ment add less sugar and more chamoy. The chamoy makes it more runny

Add more chamoy also u can use less sugar if you feel like it's to thick

Yes you can use any pulparindo I would use more chamoy the what's listed on this video

Will it get hard once it cools off? What’s the shelf life? Should it Be in the fridge?
No it does not harden, No do not refrigerate and I would say about 5-6 month shelf life

just divide all of the measurement by 4 or 5 i beleive

Maybe your container is more them 8 oz ? Use a measuring cut 1 cup = 8 oz maybe add a bit more chamoy.

The lucas you buy adds the flavor
I made some and it literally came out so clumpy and too thick i wanted to see if i could fix it but at this point im too scared 🤣😩🥺🙁
Add more chamoy. And try to get rid of the clumps with a spatula

Isn’t the sugar overkill? The other ingredients/candy already have sugar.
Honestly I think it does make a difference but you can definitely try it with out it
I put mine in the fridge and now it’s hard… can I just microwave it?
I would definitely leave out in room temperature. Idk if microwave is safe maybe place it in a plate with hot water until the candy's softens

Add more chamoy to your mixture. Also don't refrigerate it. Dip nice and slow
For anyone watching, please for the love of god dont use a dollar tree spatula. Use one that’s safe for high temps. I’m glad the spatula made it through this video, but from the looks of it…just barely. At the temps it takes to melt pulparindo and sugar, you need to use ones made for high temps. These are more for frosting or mixing cold ingredients.
Everyone in the comments is annoyed af lol who cares if she said 4 1/4 cups she could’ve said 1 and 1/3 cup too but y’all not complaining about that. She’s making 4 batches, so she’s naming the measurements for ONE batch while she makes 4!!! Jesus hahaha just so y’all don’t have to do the math
