Ingredients:
1 cup black-eyed peas (lobiya), soaked overnight
2 medium-sized onions, finely chopped
2 tomatoes, finely chopped
1 green chili, finely chopped
1 tablespoon ginger-garlic paste
1/2 cup fresh coriander leaves, chopped
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
2 tablespoons cooking oil
Water as needed
Instructions:
Soak the Black-Eyed Peas:
Rinse the black-eyed peas thoroughly and soak them overnight in enough water. This helps in reducing the cooking time.
Cooking the Black-Eyed Peas:
In a pressure cooker, add the soaked black-eyed peas along with water and a pinch of salt.
Cook until the peas are soft and easily mashable. Set aside.
Tempering:
In a pan, heat oil over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.
Add chopped onions and sauté until they become golden brown.
Adding Aromatics:
Add ginger-garlic paste and green chili. Sauté for a couple of minutes until the raw smell disappears.
Tomato Mix:
Add chopped tomatoes and cook until they become soft and the oil starts to separate.
Spice Blend:
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few minutes.
Combining with Black-Eyed Peas:
Pour in the cooked black-eyed peas along with some water. Mix everything well.
Simmering:
