    Excellent recipe! I tried this one after failing with a terrible recipe from James Beard which used Tamarind Concentrate. The block of tamarind I bought at the market looked more chopped up that what you used in the video, so I didn't soak it first. I don't think it was necessary. The taste was SUPERB. Thank you so much for sharing! I wish I could find a spice grinder like the one you used. I'm using a Krups coffee grinder, which many people use for spice grinding, but it can't be cleaned in water - only solution I've seen to cleaning it is to grind rice in it - but mine still smells from the spices. (It is dedicated to spice grinding; I don't use it for coffee.) By the way, the dates I used had been in the refrigerator for a couple of years and were hard as a rock. I covered them with water and put them in the microwave for a couple of minutes and they softened beautifully. I suspect it would help for storage to use small portion sized containers before freezing it.

    One tip is to soak dates while soaking tamarind so that they both take same time, also I don't strain it, I actually bring everything together to a smooth paste so to retain vitamins, fiber, etc.

    1 C brown sugar, 1 C tamarind, 15 -20 dates, 1 tsp black salt, 1/4 tsp dry roasted fennel seeds, 2 tsp dry roasted cumin seeds, 1 tsp ginger powder, 2 tsp red chili powder. Soak tamarind for 20 minutes in hot water.

    Iam really sad because iwish to make it but don't have the ingredients available in my country .... i really envy you indians as you are living in the land of ingredients so you can make your own special food and any other that you wish for example our palestinian Maqloba(مقلوبة)

    I made this chutney chef harpals singh ji's way , yesterday for dahi vada and the after cooking it for good 15 -20 minutes it started tasting like chyavanprash .... Chef Anoopa could u please tell why that happened ????

    instead of straining and grinding tge residue why not grind the cooked tamarind and dates straightaway ? saves time. no need to go round round and round !!

      Once cooked the chutney will be thick even after grinding. So, you will still need to do round and round, round and round.

      Tamarind have some husk or fiber that will not be smoothened by grinding... Yeah nice try...

      Yes. I soak dates overnight and make a pulp. Then just soak and strain the tamarind, and then other stuff. Then no need for round and round and round! Lol!

    Hi, great video!! Can you tell me if the tamarind was the dry whole tamarind or was it made from the block of moist tamarind that comes wrapped in a plastic square?

      There is no set date set by nature. It will all depend on various things and differ widely based on the ingredients you use. But couple of weeks will surely be fine in a refrigerator.

    The place where I shop has tamarind that comes in a block (seedless) how much of this would I use? Would it be the same amount (1 cup)? Thanks so much. I love this type of chutney and look forward to making it.

      You can refrigerate this for over a month and if freezing than over 2-3 months.

      @@sanjeevkapoorkhazana mam I mixed the soaked tamarind purie to the cooked dates & jaggery paste & strained all of them together than cooked all of them to get a thick consistancy.. So can I store it for a month ?? For how long I can freez it in a jar ? Safe in jar??

    This is too many processes. Roadside sweet chutney is very simple. And they don't waste the pulp. Everything is ground and filtered. This... maybe a star hotel dish... charging five times as much as the roadside shops.
