Excellent recipe! I tried this one after failing with a terrible recipe from James Beard which used Tamarind Concentrate. The block of tamarind I bought at the market looked more chopped up that what you used in the video, so I didn't soak it first. I don't think it was necessary. The taste was SUPERB. Thank you so much for sharing! I wish I could find a spice grinder like the one you used. I'm using a Krups coffee grinder, which many people use for spice grinding, but it can't be cleaned in water - only solution I've seen to cleaning it is to grind rice in it - but mine still smells from the spices. (It is dedicated to spice grinding; I don't use it for coffee.) By the way, the dates I used had been in the refrigerator for a couple of years and were hard as a rock. I covered them with water and put them in the microwave for a couple of minutes and they softened beautifully. I suspect it would help for storage to use small portion sized containers before freezing it.

There is no set date set by nature. It will all depend on various things and differ widely based on the ingredients you use. But couple of weeks will surely be fine in a refrigerator.
The place where I shop has tamarind that comes in a block (seedless) how much of this would I use? Would it be the same amount (1 cup)? Thanks so much. I love this type of chutney and look forward to making it.

This is too many processes. Roadside sweet chutney is very simple. And they don't waste the pulp. Everything is ground and filtered. This... maybe a star hotel dish... charging five times as much as the roadside shops.

Once cooked the chutney will be thick even after grinding. So, you will still need to do round and round, round and round.
Tamarind have some husk or fiber that will not be smoothened by grinding... Yeah nice try...
