I'm just now learning all this so i'm asking lots of questions. I guess the setting depends on what you're serving? What would you eat in the little cabbage bowl? Is that used for the dessert?
One plate is for bread and one for salad. Sometimes, I serve a little before dinner surprise in the little cabbage bowl. Nit really depends on what you're serving.
As far as inspiration goes, you can grab some ideas from the video; so, thank you for that. But using SO many plates (2 dinner plates, 2 salad plates on some settings) it’s not necessary (nor adequate) and could be confusing for many people.

Excessive and unnecessary. I get it, you're trying to show off your friend's vintage plates, but you could have done that easily without layering plates to the ceiling.

I like to serve fruit or chocolate in the tiny bowl.
