  • This unique offering has become foundational in our Colombia coffee sourcing programs for the last five years. Farmed by the Inga indigenous community, these coffees are intensely sweet like honey, accompanied by an underlying fruit pulp and floral nature. This honey processed offering is versatile across many brew methods, including espresso.

Can’t wait for this to release. This coffee is probably one of my favorites every year from Onyx.

Curious about your comment on adapting this recipe for V60. Could you explain the reasoning behind concentrating the pours in the middle on a V60 as opposed to a Kalita Wave?

I would guess that difference is because you’re working with conical v flat brewer. Center pours with the V60 might help discourage bypass, I think. I could be way off here but that’s my thinking.

Be good to provide the grind settings on quite a few other Grinders, like the Oxo, which scientific lab testing found to have just about the most consistent grind of any grinder, except one that cost four times more than its $80 - $100. I believe it's a better all-around grinder than the more expensive Encore. Has slightly better Amazon reviews too. What you guys need, what we need, is a conversion chart between grinder settings for different brand grinders. Without an exact grind setting every other aspect of your detailed pour technique becomes ridiculous.
