Ingredients
Gnocchi
100 g Parmesan cheese, cut in pieces (2 cm)
1000 g water
850 g sweet potatoes, peeled, sliced (3 cm)
200 g plain flour, plus extra for dusting
½ tsp garlic powder
1 tsp fine sea salt
Gorgonzola Sauce
20 g plain flour
20 g unsalted butter
300 g milk
water, for cooking gnocchi
1 ½ tsp fine sea salt
100 g Gorgonzola piccante, cut in pieces
2 Tbsp fresh chives, finely chopped
Preparation
Gnocchi
1. Place Parmesan in mixing bowl and grate 10 sec/speed 10. Transfer to a
bowl and set aside.
2. Place water in mixing bowl then place Varoma dish into position. Weigh
sweet potatoes into Varoma dish and steam 20 min/Varoma/speed 2 or
until potatoes are cooked.
3. Remove Varoma, transfer sweet potatoes to a plate and leave to cool to
room temperature (approx. 15 minutes). Meanwhile, empty mixing bowl.
4. Place cooled sweet potatoes in mixing bowl and mash 5 sec/speed 6.
Scrape down sides of mixing bowl with spatula then mash again
5 sec/speed 6.
5. Add reserved grated Parmesan, flour, garlic powder and salt then mix
5 sec/speed 1.
6. Transfer dough to a well-floured surface and bring together into a ball.
Add more flour if dough is too sticky to work with, although it should be
soft and fairly tacky.
7. Divide into pieces and roll each piece out to form ropes (Ø 2 cm). Cut
ropes into 2.5 cm pieces. Gently press and roll each against a fork or
gnocchi board to make small grooves. Transfer gnocchi to a baking tray
dusted with flour, and continue until all dough has been used.
Gorgonzola Sauce
8. Place flour, butter and milk in mixing bowl then cook
6 min/90°C/speed 4. Meanwhile, bring a large saucepan of water with
1 tsp salt added to the boil.
9. Add Gorgonzola and ½ tsp salt to mixing bowl then cook
2 min/90°C/speed 4.
10. Cook gnocchi, in batches, in boiling water until they rise to the surface
(2-3 minutes). Remove with a slotted spoon then transfer to serving
plates and pour over Gorgonzola sauce.
11. Sprinkle with chives and serve immediately.
