In the Mountain Province where there were no refrigerators/freezers then, Etag is a process of preserving wherein pork meat when abundant is sliced, salted in a container for 2-3 days. They are then hanged above the cooking area so it gets smoked gradually. After several weeks or months when it is thoroughly smoked, they are packed in Chinese jars for use in the future. Because etag is a bit salty, usually a slice or two is added to chicken soup which makes it so delicious. It is also added to pulses like mungo beans and etc.
