I heard this Chef cooked a dish inspired by the transatlantic slave trade for the Finals on Top Chef. If that's the case, I am impressed. That is what food is all about, combining flavors, culture and history all into something that gives you nourishment at the same time.

what you call doubles in trinidad we have a similar thing called bambara beans in ghana(West Africa)
