I think that the knights fight however they want to, especially when you compare Asbel's iaido with Malik's spellcasting and Victoria spinning her spear around like a cheerleader's baton.
I imagine he wears White Clothes, because its a his "ideal" form of being a Knight. Like a White Knight. Or it could be something to do with the fact he enjoy's cleaning, so he always wants to look that way. It could even be something crazy like, he wanted to look bright and flashy like a superhero Knight that can save everyone (and really I wouldn't be surprised if it was), maybe something to do with those Comic Books that Asbel mentions that Hubert liked.
White clothes is the only outfit he can pull off without looking stupid IMO. Although his normal look makes me think he ripped off Kyosuke Kagami a bit.
Indeed, though in some cases they don't like in SMT Games like the Persona Series, but if you know the Series then they generally make the main so awesome in a certai field they get away with it.... But that is a good point. His fighting style is anything "but" Knightly. I mean Knight School apparently teaches you that kicking your opponent to death is a noble way of combat? The only thing Knightly about his Style is his Sword Moves, which are generally more known to be finishers...

I always wonder where the hell they get the stuff tailored, I mean what do they go up and ask "Hey can I get something brightly colored, very obscure and something that no one else in the entire world would wear", and I love how no one questions it either. Considering the outfits and fighting styles of Malik and Victoria, it's possible the knights don't really have a set uniform. Victoria's outfit does look rather military, though.

More-so Cless, then Stahn, he wasn't really a Knight, he just had a very Knight-esk character design, you could also say the same for Veigue as well. Asbel style is indeed much cooler, and flashier, he stands out and looks anything but generic. Asides from his "obessive protect personality issues". But Asbel wouldn't be Asbel without it. Maybe Asbel more about avoid hits than taking them? He ismore of an agile fighter. Speed over all.
xD I didn't mean it in a bad way sorry i misunderstood :D but yeah asbel's sword style is much mroe fluid while stahn is more brutish although his skills gets more refined later in the game
