I added the person entity for the self hosted version, sorry I didn't make that clear in the video. As for your second question, no it would not as the /humidity is not the same as /temperature, if you wanted temp and humidity you could use mainfloor/* and catch both
The myhome/mainfloor/kitchen/humidity showing as a match for myhome/mainfloor/+/temperature is pretty distracting. I assume it's hard to fix the video...

So far, I've got Tasmota on an ESP32 (connected to an 8-channel relay board and 2 DC motors on a small controller). I've got Tasmota set to flip each of the 8 relays and I have 4 more buttons that are set up for Interlocking (using Tasmota's "Shutter" options). For reasons I haven't bothered to figure out yet, the camera on my ESP32 board never worked in Tasmota. And last night, I finally got them to show up properly on Home Assistant. And eventually I want to be able to control them remotely (on a free IoT option, even if I have to install one on one of my Linux servers) Oh, yea - the interface has to be simple and attractive, since this is all for my wife ;) I'm not married to Tasmota, but t's got me this far. The MQTT was kicking my butt pretty hard. HA would see the ESP32 and relays, but they were disabled and HA wouldn't let me control them. I eventually uninstalled/reinstalled everything to do with Tasmota and MQTT, and then it started working. Go figure. The chickens will be ready for the coop (which is still under construction) in about 3 weeks. After I get the doors and lights working in HA/Tasmota, I'll add temperature sensors and water level sensors. Thanks.
Wow that's a great project, home assistant is perfect for this. I have a video covering remote access so you can keep tabs on your coop while you are not home.
At 5:47, You say that it will match all at left side, including myhome/mainfloor/kitchen/humidity are you sure while this is used myhome/mainfloor/+/temperature ? humidity are not equal to temperature
That's weird as it compatible with Mac, Linux and Windows. However you can use home assistant itself just monitor the topics you need, although you have to monitor them individually.
thanks for replying to my comment, but i have one more question. Can i use mqtt for manual integration with my home device? Because my home devices can't connect directly with home assistant for example my mitsubishi ac or i need something else for fix it? Btw i use home assistant container. Hope you can help me to answer this question ...
@SuciAmnh does your ac use or support mqtt? If so, then yes. If not, depending on what you are trying to do, you may be able to add an intermediate device like an esp32 device that uses mqtt to accomplish your goal.
5 videos so far on youtube about this subject - only 1 presented setting up MQTT in a simple, easy manner. This is not that video. Simple instructions for setting up MQTT on HA is what is wanted without all the fluff.

Are you sure a wild card of main floor/*/temperature would pick up main floor/*/humidity?

Kan confirm that it does not work. Everything after the + wildcard has to match as well. But thanks for the video :)
